I love homemade bread! As a child, my mom would make it from scratch to save money and healthier. Now I am teaching it to my sons as we try to avoid all of the unknown additives going into store bought foods!

The use of potato in bread making prolly started in Europe when their staple food potatoes (cooked potatoes from dinner left-over) were added in making bread for the next morning, and they found out that the resulting bread had better texture and won't stale as fast as those without potatoes. I think the japanese copied this technique in their (soup-starter) sweet dough breads like dinner rolls. But the dough did not contain cooked potatoes and use a small portion of cooked flour/water slurry as a starter to their dough. The point of cooked flour/water slurry is for the yeast to have a better food for their growth (like sugar) than the uncooked starches of the raw flour. Just like an additive for better yeast growth and dough development. Of course, this is beside the point that potatoes can impart a different kind of taste for the bread. I think the resulting dough is softer and can not stand up-right well on it's own properly. Maybe because the percentage of gluten in the recipe will be less because of the added cooked potatoes ? That is prolly why those japanese soft rolls are usually inside a colourful muffin cup to make the roll more up-right like a panetonne ?

Great job and in the meantime while good prices continue to rise up we have All heard of the fact stretch out the food and starchy foods is a Great way to do this and tastes amazingly good 👍 and I would rate a Triple grade A+ from Canada Alberta

Contrary to some comments, I didn't think these looked difficult at all. Just needed multiple risings. Good for a beginner. Both of these looked incredible! I was really skeptical about the first dough looking so sticky, even after rising. It absorbed every bit of the bench flour. But it worked. It was the softest, springiest bread I've ever seen. Could imagine that warm, with butter just melting into it. The second dough somehow ended up being stiffer from the beginning. Which meant it was going to hold up well with the mozzarella. That looked so tasty. Wonder how many other cheeses could be used instead, or in addition to mozzarella. And maybe chopped pepperoni or salami inside? So many possibilities. Yum.
You won't know until you try it! They are very flexible!! When I use leftover mashed potatoes, I warm the potatoes up a dad on a low temperature in the microwave! It makes them easier to use and get her recipe! Love them every time!

That’s the beauty of the recipes, anyone can substitute a similar ingredient to suit their tastes. Me, I’ll stick with regular milk.😉. You do you, I’ll do me. 😁

Plan to try it. Looks good. Only negative was the video. Had to watch it 13 times to get the ingredients and the measurements noted down. Ie the qty of butter is on screen 1/2 a second ... its 28 if you wonder too.

did you pre-cook the potato flour before adding them to the other dough ingredients ,just like the way she pre-cook the potato in a microwave oven ?
@@MathTidbits No pre-cook. I just add the potato flour to the dough ingredients. For 1 cup flour, I add quarter cup potato flour.
