- Spatchcock Pesto Chicken with Rocket & Goat’s Cheese Mixed Salad
(Serves 4)
For a quick middle of the week, work-from-home recipe, where I had all the ingredients in the fridge & needed to use. So I came up in making a spatchcock pesto chicken that’s served alongside with a rocket & Turkish goat’s cheese mixed salad.
The video is self-explanatory & below is the list of ingredients for your references:
1 medium-sized chicken
Seasalt & black pepper
150g (or more) pesto if your choice
Preheat oven gas 6/200C & roast for 1 hour & 15-30 mins until cooked.
Salad Mix:
100g Rocket leaves
200g baby beetroot
200g baby cucumbers
1 red bell pepper
2 salad tomatoes
150g The Real Olives in lemon, thyme & black pepper or your personal choice
200g feta or crumbly Turkish goat’s cheese
Dressing:
Place dressing in an empty jam-jar so you can use regularly for any salad. Can last up to 1 week (no fridge).
100ml red wine vinegar
50ml EV olive oil
1 tsp horseradish sauce or cream of horseradish
1 tsp wholegrain mustard
1 tsp agave or honey
Seasalt & black pepper to taste
