  • Hello! In this video I describe and show the process of creating perfect sweet tartlets from shortcrust pastry at home.
    Please turn on the subtitles - there I talk in detail about each stage of the work, and also share the possibilities of changing the recipe and correcting errors.
    Ingredients
    for neutral (white) sweet tartlets:
    flour - 440 gr
    salt - 2.5 g
    butter - 245 gr
    powdered sugar - 175 gr
    almond flour - 45 gr
    egg - 90 gr
    Ingredients
    for chocolate sweet tartlets:
    flour - 385 gr
    salt - 1.5 g
    butter - 270 gr
    powdered sugar - 170 gr
    almond flour - 55 gr
    cocoa powder - 35 g
    egg - 80 gr
    Dough preparation method:
    To knead the dough for sweet tartlets, I chose the Sablage technique.

    The main points of cold kneading dough (Sablage):
    1. Grind the flour with cold butter into homogeneous crumbs resembling sand.
    2. add dry ingredients (icing sugar, almond flour, cocoa powder, etc.)
    3. add liquid (egg, water, juice, etc.)
    4. Chill the dough well before working with it.
    in the video I show:

    2. modern method (separately the bottom and separately the edges)
    in the video I tell you how you can bake a tartlet empty (without additional weight) and with weight (bean grains as weight). both methods exist and have their advantages and disadvantages (more on that in this video).

    I roll out the dough for sweet tartlets to 2 mm.
    I bake at 160°C (320°F), baking time depends on my goals for the tartlet, the size of the tartlet, and the features of the oven.
    In my oven, I always bake everything on convection (I only have one baking setting).
