My dad retired from Amtrak. He got his recipe from the diner car of Penn. Rail Road. He used whipped cream cheese, spicy brown mustard, sweet relish w/ some of pickling vinegar in it, salt, Worcestershire sauce (dash or two to taste) and paprika on top to garnish. He used the extra yolk mixture by stuffing 2" pieces of celery and on toast corners w/o the crust. Try it - they're always the 1st appetizer to go!

I brought them to a football party and I had 3 friends text the next day asking how they were made. I first dice up a lb of bacon and slowly cook in a dutch oven pan. Then I take peeled hard boiled eggs and lightly smoke them with little to no heat for about an hour. I then half, and put yolks in a mixing bowl with mayo, diced jalapenos, and instead of traditional seasonings, use your favorite bbq rub. Then I mix and pipe into the egg white halves, top with crumbled bacon and dust with the bbq rub.
I'm a fan of southern style, but I do half relish, half pickled jalapeños that have been finely diced. I also add a bit of the jalapeno brine in. Adds an awesome kick, and is sooo tasty! I'm gonna have to try the bacon and avocado ones soon!

Then finally garnish with chili powder instead of paprika. What you end up with is a spicy (from horseradish) and heat (from the peppers) that contrasts well with the cold egg and mayo. Its really quite tasty, but not for those who don't handle a little heat well.

I do a version with minced pickled shallots instead of relish, a little horseradish in the mayo, and topped with a sliver of jalapeno and crumbled bacon. Love deviled eggs! These look fantastic as well
For variety #2 I skip the minced dill and just use dill pickle relish. It's a little bit more "deviled" in my opinion. I could totally go for the bacon and chive ones---have never tried that.

I noticed when you took the egg yolk out of the hard boiled egg, that the yolk was centred. For whatever reason my yolks quite often are off to the side which makes it hard to peel. Could it be that I am putting too many eggs in the pan? Are the eggs too fresh or too old ( I know how to check for freshness ) My eggs are straight from the farmer and are room temp because I don’t refrigerate. This is a mystery to me. I also like making pickled eggs but having that egg yolk centred would be so much better

I also put smoked paprika on the bottom and top and put tiny pimento pieces, chives and bacon bits on top. I do another version with 3 slices of green olives with pimento on top when I don't have bacon. They are amazing as I'm sure yours are too. TFS
