As a Level 1 chef myself, I appreciate how Epicurious makes cooking seem approachable by not only including a Level 1 chef into things like this, but also for making decisions like promoting Emily to Level 2. I like seeing someone whose cooking skills I think I could match (or beat) making things that are a bit fancier than what I've dared to try - it encourages me to expand my cooking horizons.

So will Emily because they aren’t putting snobs with such refined palates on here that they can’t enjoy the basics most grew up with (they’ve just found more than one way to devil an egg, that’s all)… the pro will obviously know everyone starts hungry and makes things catering to what they know and the taste that they love, and all three versions would be, so long as Desi doesn’t contaminate the filling putting the fork back in after tasting for sharing, enjoyed by them all. The pro can give some simple “let’s get your eggs a little more stable so you don’t lose any albumin shot glasses” tips and tell him a simple way or two that won’t take more effort but can elevate the taste… but no one I’ve met who can eat eggs at all doesn’t like em deviled though I’m sure some “hot eggs only” people exist out there (I do pity those with allergies! Deviled eggs were something I ate a couple dozen halves of every holiday as a kid; that and stuffed mushrooms my family made were my protein more than the actual main dish though I enjoyed the ham, too, just in far smaller portions since it was salty and I’d already eaten a thousand calories by the time the bird and pig were ready lol).
You know what would be cool to see... a re-visit to older recipes to see how different cooks/chefs make things differently. An example: A Re-visit to French Toast to see how Level 2 Emily does.

@@carebear91 Yep, I got a 2 layer (stackable-they lock together or you can use just one, either way) egg carrier that the egg inserts can be removed to make it double as a holder for cupcakes or anything else… doesn’t hurt that I got it very inexpensively and (important to me) it was made in the USA, but it has been incredibly useful when storing and transporting eggs! Saves the time of trimming the bottom, too, which is also one more way it might break, slippery little 👿 devils. 😅
There’s no way Desi actually makes them like that. Cutting horizontally and cooking an egg for 20 min is actually crazy 😂. I gotta watch more Desi videos lol

Great suggestions! I would love the stir-fry. That's the kind of dish even a true level 1 can knock out of the park as a crowd-pleaser, but a level 3 can elevate it to heavenly.

As someone who loves hard-boiled eggs, I never thought to steam them before. Thanks, Josh! Also I typically just use cold water, but ice sounds even better. When I think of deviled eggs I think of head to tail cuts. Desi just showed me something new with the across-the-waist! Though his cutting and scooping techniques remind me too much of how it is for me half the time I try to make deviled eggs. Everyone's eggs look delicious, but I'd ask for a big glass of milk to go with Josh's.
I heard about steaming eggs several years ago and it's definitely a great way to cook them. Peel easily, cook consistently, no big pot of water to dump.
Honestly I never had these and I may try them out. Emily's recipe looks nice. My mom made something similar but she fried some mushrooms on the pan until browned and then blended them with yolks, then stuffed the eggs back. Very nice.

I’ve always done the plastic bag for the piping but I never thought to use the bench scraper to get all the filling up in tip, that was so satisfying because you don’t waste any, can’t wait to try that next time!
Surprised no one chose an instant pot. As someone who struggled to get perfectly peeled eggs, the instant pot method saved me. Fool proof and works every time! Rack on bottom, 1 cup water, single layer of eggs on rack, 5 mins high, 5 mins natural release, plunge into bowl of cold water. Perfect peel, no weird green halo around yolk. Super quick and easy.
I grew up not liking deviled eggs… but I found a recipe I thought I’d like, so now I like sour cream and cheddar cheese deviled eggs. I like the taste of sour cream better, and the thicker consistency it creates. Having deviled eggs with some cheese or bacon makes a great breakfast or lunch.

I put serrano peppers on deviled eggs- so I'm the genius, chef. I also put a spot of avo mousse on the bottom of the egg before filling, fried prosciutto strip on the top, micro cilantro, poppy seeds on top. I'm proud of my deviled eggs.

I use my air fryer to cook hard boiled eggs. No water needed. 275° for about 16 minutes. They come out perfect.
