Amazing Okra Rice

- Learn how to make tasty okra rice in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com Okra (or ochro) rice is a delicious Caribbean side dish, which happens to be vegan friendly, perfect for gluten free diets and very much vegetarian.
For this vegan gluten free okra rice, you'll need...
1 tablespoon coconut oil
1 small onion (diced)
3 cloves garlic (diced)
1 scallion (chopped)
1 tablespoon chopped parsley
1/4 teaspoon black pepper
5 sprigs thyme
10 saffron
1 bird's eye pepper (bird pepper)
1/2 bell pepper (diced)
2 cups jasmine rice
1 cup pumpkin (diced)
12-15 small okra
3/4 teaspoon salt (adjust accordingly)
1 1/2 cup coconut milk
2 cups water (adjust to the type of rice you choose to use)

@@deelight41 yes i added the uncooked Quinoa the same way, and at the same point he added the rice. A year later and i still make this dish.
This was the very first rice I made when I was learning to cook. Didn't come out like this because I forgot to add a few things. I love okra so I added it to the rice. Will try your version for sure. Thanks for sharing.

I see this video is from two years ago but I grew okra this year. Used yams and the sweetness was so satisfying. Changing the world one side dish at a time.
I made it !!! Turned out good. I added some mushrooms and celery too. First time I ever tasted coconut milk. It’s good . Very rich. I also made some Cajun shrimp .

I needed to use some back logged okra, butternut squash and hot peppers from the garden as well as some chicken stock I made cpl days ago. This recipe literally checked every box ingredient wise for me rn. Thanks, I didn't even have to run to the store for this one
