The cellulose the coat the shredded cheese in makes it noticeably chalky. Even when I make ziti, I buy blocks of mozzarella and cut it up tiny. So it melts nice throughout. People always think I'm crazy when I shred cheddar for Mac and cheese, but it's night and day, and that's why I always get asked to cook it.

The ingredient they put into shredded cheese and other things such as vitamin as a filler is called cellulose....basically wood pulp. I work for a vitamin company so I know this fact well. :)
That "something" the pre shredded cheese is coated with that stops it from sticking together is cellulose, yes wood, you have it correct, anyone buys that stuff must love chewing on trees.Great video.

My grandma made her mac n cheese just like yours...layering the cheese and pasta (naughty woman also put dots of butter on every layer!), finishing up with pouring the milk through the center. For some silly reason, I've moved away from the technique and have been making a roux based cheese sauce lately. Phooey on that! I'll be making your (and my grandma's) version December 7th for my baby girl's 14th birthday. Mac n cheese is her favorite dish, and has been requested. Thank you for the wonderful reminder!
I've made my mac n cheese this way for years. I add some grated onion on the bottom before I start layering. I also add in a little Velveeta if it is on sale.
+The Culinary Fanatic Great advice but then you go and use pre-grated Parmesan and Pecorino! Never use pre grated Parmesan! Seriously, buy the blocks of the good stuff and grate it fresh. SO much better! Also, that Mozzarella looks awful. It should come in balls and you tear it up into pieces. You shouldn't be able to grate good Mozzarella, sorry. I'm sure this would taste even better with proper Mozzarella and Parmesan! Great recipe though. :) So gooey!
And I kept thinking this man is gonna need a bigger boat ( pot) lol I invested in the 8 qt enamel Lodge Dutch Oven and it's my go to vessel for most things. I love cast iron and have many pieces collected over 40 yrs. If you only want to buy it once, buy Lodge. Great recipe !!! 3 lbs of cheese and you certainly have my attention lol .:o)

I adore cheese but have never liked mac n cheese. I've never even tried to make it myself because I got so turned off by it as a kid. For the roux based version I use a pinch or so of dry mustard (Coleman's). I still put plenty of cheese on top for that beautiful browning.

Great vid, easy to follow...I use smoked Gouda but a little salty, I'll try Mozarella next time. That end result looks off the chain.

I noticed you completed the presentation by, placing your head & Cheese into individual cast iron meat loaf pans, is that the way you serve it?
I did that mainly for the video. If we have this for Thanksgiving, it will go right on the plate
