  • My family's favorite bbq hands down. This is so easy, can be made in advance, and also works as a crock pot or stovetop meal. This will save for several days in the refrigerator and reheats even better.
1 3.5-4.5 lb chuck roast or 3-4 lbs of chicken. (If cooking chicken, skip the sear. I'm sure it would also work for pork but have never tried!)
2 14 oz cans tomatoes (diced or whole)
    2 Tbsp butter
    1 1/2 onion, diced
    5-6 cloves of garlic
    1 shallot optional
2-3 cups bbq sauce (I use homemade, 2 cups of sweet bbq sauce and 1 of vinegar bbq sauce)
    Salt
    Pepper
    Dijon mustard
If oven braising preheat oven 300-325 F (Lower takes longer)
    Salt and pepper roast generously.
Heat dutch oven or cast iron pan to smoke point (I use ghee but you can use any oil you prefer) and sear 3-4 minutes on each side. I reduce to medium heat or medium high heat after placing meat in pan to keep from burning the oil.
Remove chuck roast, reduce to medium or medium low heat and add onion. cook for 2 minutes, add shallots, cook for until onions start to turn translucent.
Add Garlic, Stir vegetables until you start smelling the garlic, about a minute.
    Add tomatoes and BBQ sauce.
Bring to medium-medium high, uncovered and reduce liquid until it thickens, stirring frequently.
Smother roast in dijon mustard (I also mix in paprika and chili powder)
Place back into pot and cover.
Place in oven and check at 3.5 hours. Meat should be tender and fall off easily with fork. If not, replace to oven and cook in hour increments. When finished cooking, meat will be the most tender if you refrigerate in its juices and reheat the next day, but it can be eaten right away when finished!
Let me know what you think, or if you do something similar, what herbs and spices you use in your barbecue!

@@ThebateskitchenI agree with Alison, I watched all kinds of cooking shows over the years but yours is the best! Your personality, the fact that you love what you cook, how much you love your family and your faith. Plus, you praise Brittany for all she does. You both are so supportive of each other.
To me that's the most important. And to be real, your food is what most regular people eat.

Yuuuummm. We don't have those Hawaiian sweet rolls up here in Canada, but there's sweet rolls with a French name (escapes me atm🤔) I think they'd be same. I always made apple/cabbage slaw for my ground turkey burgers and then discovered everyone loved it on bbq. So now it's a must! I also just learned about why smoked Paprika is used! 😉 I'll try your method next time I do bbq. Last time we did brisket😋

As I watched I was thinking how great it would be for someone with some professional experience to join you and give you some professional tips right as you mentioned you had a guest chef coming to join you. I love cooking and love teaching people who really want to learn. After cooking for the past 10 year professionally and now becoming an executive chef, I will step back from actual cooking and now be more of a teacher which I'm looking forward to. Its a great feeling to past along the knowledge that I've learned from others and from myself. I did see you start to point your finger on the knife while mincing the garlic and quickly pull it back and grip the knife properly...pointed fingers in the kitchen a big no-no LOL.

A little tip I learned from my Momma. If you run the cold water and cut your onion near the sink it really cuts down on the eye burn..

If you chill your onions for 30 minutes. Then cut off the top and peel the outer layers leaving the root end intact." It's the root end that has the highest concentration of the sulphuric compounds that cause your eyes to tear.

You are really so good at presenting and explaining. A tip to you on onions. If you take a match and put it in your mouth with the sulfer on the outsire, no tears. Also, once you make the first cut, put both halves of onion in cold water for less then a minute..no tears. Are you putting the written recipes anywhere on your site yet?

Oh man there's no other way to eat a BBQ sandwich! Even when I order a pork plate, I order a side of slaw and load my fork with both for each bite. It's the contrast of the cool, creamy, tangy sweet slaw with the BBQ that makes it heavenly.
