Typically, Filipino barbecue is made with pork. Tito Crispi recommends pork butt, but most parts of the pork will work too.
I used chicken thighs as an alternative, which is a popular Filipino BBQ meat choice as well. If you don't have soda regularly at the house or have no access to banana ketchup, my substitutes are in the later part of the video!

I was considering making tacos al pastor tomorrow until I saw this video. That Filipino barbecue looks phenomenal! Best of all, I have all the ingredients including the skewers. I’m taking chicken thighs out of the freezer tonight. I may skewer slices of vidalia in between the pieces of chicken. I love cider vinegar and I know I will love that sauce. Thank you for sharing!

Made this today with chicken thighs. Super easy, I only marinated it for about 3 hrs. Will do it overnight next time. Was really tasty and tender... Need to char the outside a little better next time too.

I couldn't find pork butt at my local grocery store. So I bought a 2 lb. Chunk of pork loin. I followed your uncle's recipe. My meat was very dry except for the pieces that had lots of fat. Next time I will try it with chicken thighs since there is more fat there than pork loin.

I dont have pop like cola but would using club soda or tonic water be a good alternatives too?
Jeanell, can you provide cooking directions for air fryers. I currently use an air fryer “oven” and not the bucket style air fryer, I use a Nuwave Brio air fryer oven and appreciate baking directions for that. Much appreciation and hsppy holidays !

In your video, you used dark soda but recipe says sprite or 7UP.
Which one does your uncle use?

You cannot sub calamansi with vinegar..the flavor profile is just not the same.. use any citrus fruit instead like lime,lemon etc..
I would eat this with collard greens and white rice 🍚😃.
I'll eat it with atchara with the same marinadated sauce to make a fried rice.

Most oven broil has a temp setting. So what degrees?
not too sure about the actual degrees. a quick google search says my "high broil" is probably 550 degrees Fahrenheit
