You can't barbecue chicken. Please don't misappropriate my culture by calling "grilling", "barbecue". Grilling is high temperature for a short time. Barbecue is low temperature for a long time. In barbecue, a tough and inexpensive piece of meat is cooked slowly so as to dissolve the connective tissue into a tasty solution that lubricates the now loosened meat fibers. Properly selected and cooked piece of meat can produce barbecue that doesn't even need sauce, like a properly cooked steak. This is done with pork, beef and goat. (although I find goat to often be too gamey in flavor) Chicken, shrimp, fish and other foods cooked like this quickly over high heat are either grilled, like this on a usually metal grate, or roasted on a spit of some sorts. (typically, metal or wood) This is not barbecue!

It's great but I would reserve the marinade BEFORE adding the chicken, in order to avoid food contamination (salmonella etc)

I usually cook the marinade that chicken was in to kill any bacteria then baste.
