Here are the sharpness numbers from this and the previous video. Lower is better.
#1 (Push): 176 after stones, 104 after strop
#2 (Pull): 374 after stones, 181 after strop
#3 (Sawing): 242 after stones, 191 after strop
#4 (Sweep): 298 after stones, 159 after strop
Once again, thank you for this useful summary. The creators just haven’t seen the value yet, but I have. I just wonder if the lower scores could be improved if a bit more work was put in, or maybe just a “finish up with 30 seconds of push” then stropping, which seems like a fine idea.
I love the fact that you guys took the amount of time and effort to go through and thoroughly test each method. Very myth buster of you guys thanks!
Thanks for this. I really expected number 4 to have an amazing result after stropping, actually all of them but I didn’t expect THIS overall improvement across the board. 55 years ago I worked in meat cutting and even though the boss never let me touch his knives to stones, I learned by observing and practicing on my own knives. Your technique is pretty much exactly as I learned back then. Stunning results here.😳👏👍

Impressive edge on all of the knives, but the difference after stropping is very enlightening.

I’m surprised how rough all your edges were. I’ve been using the precision adjust for 7 months, and I’m getting true mirror edges. More with the 600 and a lot more time with the ceramic gets the job done. That being said, where possible, not using the 320 at all means you’ve no deep grooves to remove with the subsequent grits. One of the huge advantages of this system is that you can easily copy the existing bevel angle, and thus don’t have to reprofile every time. I finish with a smooth leather strop and Smurf Poo grinding paste to give a better shine. I don’t have a sharpness tester, but i can certainly get knives exceptionally sharp this way.
Nice video, and I just received my Work Sharp Precision Adjust Elite sharpener today. Looks like the sawing motion (#3) would work for roughing in the edge, and then switch to the pushing motion (#1) for the finer grits. Our knives are pretty dull, so will be great to actually get them sharp. Thanks for the excellent experiments and review.
really gives some validity to what i grew up doing not knowing anything, sawing to remove material quick and get past a damaged section, then push with only enough sweep to hit the entire blade length to really set the edge before stropping
I really appreciate you guys making this video. The directions that come with the precise adjust tell you to use a back and forth motion (sawing). Which gives the worst edge.

Thanks for the video and the follow up results. Just proves to me that more people would be better off learning how to properly hone and strop their knives rather than spending a lot of money for high dollar stones and diamond films when a a few strops with different pastes can do the same thing for a lot less monay

It's great you a testing your product like this we like to see real world results this means a lot I'm going to pick up this system. I have the Ken Onion belt sander sharper one can never have enough sharpening supplies.

After many moons of sharpening with all types of systems including a maxed out Wicked Edge, I now almost always end up on a 800 grit Chosera stone and Strop Man strop on the fine side. Convex edges with a bit of tooth cut like crazy and last far longer than the finest edge you can get with diamond spray on the Wicked. I like a mirror polished blade you can split hair with but I save that for the Japanese kitchen knives. I think people put too much stock in the "sharpness" of a blade when what they want is something that cuts and keeps cutting.
Exactly you don’t want to make something crazy sharp if all you do is cut boxes with it you want a bit of tooth in the edge
And issue not mentioned is he stopped backwards if wanting to maintain any kind of tooth, (Which enhances edge longevity and ability to cut aggressively). By stropping heal to tip, it ran contrary to the way the edges were sharpened on the device, and destroying the toothy edge. Always strop in the same direction in which the blade was stropped. Only difference is the stropping must be pull rather than push or the strop will be damaged.
Even the barbers method of stropping in a straight line will be superior to a stopping against the tooth pattern. but still inferior for cutting anything but very weak substance such as beard hair back

I just bought the Precision Adjust Elite Knife Sharpener. Unfortunately it has two major flaws. The clamp does not hold all knives securely, and the clamp is in the way of the abrasive plates at the 15 degree angle.
I would like to see how long it takes to sharpen different types of steel. Which is faster , longer. Etc
I mean it kinda makes sense, I always thought pulling would be better as you're not biting into the edge as much but thinking about the workings of it when you push you're not just honing but you're also microscopically reshaping the blade at the same time as keeping the edge clean of burs instead of letting them build up.
A leftover burr can affect so much. Initial sharpness, edge stability and wear resistance. Sometimes when I sharpen I try to avoid a burr and do what is know as a plateau technique.
Its when you set your angle but without apexing the edge on the low grit stones and as you refine your scratch pattern you get closer to getting an apex with each grit. Finally on you finishing stone you set the apex. It's a pain to do and takes more time but you do see the results.
A burr is weakened metal (think when you break a pull tab of a soda can by folding it over and over) and by sharpening to a burr on each stone and each side you get more weakened/stressed metal. That is what you end up sharpening and it can hold an apex as well as non stressed metal. But getting a burr makes sharpening easier and guarantees a sharp edge at the end. The other way can be a real pain and takes up time with trial and error though you do get better results in the end.
Great video guys. You stil left the burr on the edge. I before stropping take off the burr simply passes couple times the knife on the block of wood. After that I'm sure that i take off the burr end then do the stropping. I'll be grateful if you'll make another video including that technique. I'm curious about the result. Take care.

I own the Ken onion and the precision adjust as well. The Ken onion is in my garage for the bigger blades and the precision adjust is in the house. My wife said that if I set it up on the dining room table again all three of us will be in the garage.

Do an average of 5 random measurements after the final process. providing one point as a measurement for the entire blade is pretty shallow

Thanks for doing the test. However, as a scientist, I must challenge your testing methodology. To obtain conclusive results, it is important to repeat the test multiple times and calculate the mean of the results. Additionally, calculating confidence intervals can help determine if the observed differences are statistically significant. It might be a bit extra work, but it would be interesting to see the test repeated at least three times.

Diamond will work great! It may take some time but diamond is a great sharpening abrasive for super steels.

One of them sure knows the way out.
I have always been told to run the knife perpendicular to piece of wood before stropping the knife to remove any burs. Maybe do a video and use microscope after running the blade before and after wood and after stropping. Sort of verifying or debunking the myth.
Same thing done when sharpening hockey skates. A quick swipe against a 2x4 to knock off the wire edge, no pressure really just the weight of the skate. It works, as you can see the wispy metal wire left behind in the wood.

What are you using to strop the knives?
It looks like the leather strop that comes with the angle guided bench sharpener, loaded with green chromium oxyde compound.
Using the strop on the Guided Sharpening System with green half-micron compound. Here's a link for your reference: www.worksharptools.com/shop/sharpeners/manual/guided-sharpening-system/ in order to get the strop you'll need the upgrade kit as well.
So after stroping there wasn't a very big difference between the 4. Is there a method you preferred?
There’s a not negligible difference. Method #1 was much sharper.
When you do the push method are you still forming the burr?
Yes, a burr is formed either way. It's a bit more pronounced when pulling but both produced a burr.
For the final ultimate challenge: can you replicate the 104 with any of the other knives following the same stones as original test with PUSH and the strop? Just asking. Great video gents.👋

You messed up one thing. You should have strop’d the same way you worked each knife, but instead you strop’d all in the sweeping motion. I always strop mine the way I work the stone.
You wanted them to strop using a push method or sawing? Maybe with your strop, not mine. 😅
