Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.

Dear Dmitra, you are right, this is the best tasting apple filling I ever made. Everybody who gets some tells me it is the best they ever tasted. I do have some information for you in return. There is an apple corer/slicer/peeler that has been around since colonial times, and is a whiz. In seconds, apple is cored, peeled and sliced as you turn the crank. Very simple mechanism, no electronics. RUclipsr Oliver Porter gives an invaluable tutorial on how to use one, get the slice size you want, adjust how deep the blade goes into apple, etc. We had a couple at our bakery and they saved our lives. Young kids could turn the crank and peel hundreds of apples for us. As to model and price, that will depend on what you need. Some attach with a clamp, good if it fits your counter, or with a suction clamp that does lose its ability to hold over time. There are ones cast iron coated with porcelain, stainless steel, etc. I tend to avoid the really cheap models from China, that come in $20 range. Pampered Chef is ridiculous for $64, they provide a little wooden table to clamp the unit onto, totally extraneous if you have a table or counter top. I would check to see that the slice thickness is adjustable, peeler, too. Bed Bath and Beyond has one for $39.99, but the slice is 1/8", and I couldn't determine if the blade is adjustable. Kohl's has a stainless steel model, $34.99, with a 3/8" slice, couldn't determine adjustability. You might want to squint and see what model Mr. Oliver is using. I recommend whole-heartedly that you purchase one of these to save you endless hours of preparation. If you ever get back into professional baking, buy several. Above all, watch Mr. Oliver's video. He showed me how to do things that I didn't know in the past, but would have benefited from. Thanks again for your champion recipe. I hope you'll let your followers know if you do get one of these, and how you like it. Cheers! PS, I made a Dutch crumble topping with butter, flour, brown sugar, white sugar, oats, pecans and walnuts. Grand!
Even faster is 4 cuts with a chef or nakiri. 6 Sliced and cored apples in 10 seconds.
Made an apple pie using her sauce recipe and it’s the Best tasting apple pie I’ve ever made so far. I’m using this recipe for now on 😊. Thank you for sharing this recipe with the world 🙏
I'll try it today
Nope. Sugar and cinnamon…
That’s it?? Boring
You should eat at my house.
Her bakery was five minutes from my house. Everything she made was to die for good, looked very neat, best ingredients used and she always had a smile on her face. I miss her bakery.

@@mikesouza6545 How do make your apple Pie.
I did it with pears. Yummy! Thankyou for the recipe.
I made this and forgot the cream and it still rocked. Without the cream this way way better than canned. First time making my own filling and I’m pumped for tomorrow
Happy Thanksgiving!!
@@DimitrasDishes Delicious
Yummy but I would mix cornstarch separately to avoid lumps.⭐️👍
Just finished making this and it's cooling. It already tastes amazing! Can't wait to finish off the pie this afternoon.
😮
I'm 83 and my cook for 60 years is sick so I'm the new cook. I just made this but didn't have the brown sugar so I used real maple syrup instead and I added a 1/2 tsp vanilla. Then I forgot to use the cream. It tasted wonderful. My ex-cook asked where did you buy this and I said," I made it". She said,"No you didn't". So I had to show her the notes I made while you were demonstrating.
awesome man
did you use a cup of maple syrup?
When you say "my cook for 60 years", are you referring to your wife?
If so, i know what you mean, I have a live-in bum of 28 years and she doesn't know how to cook, but I still love her.
@@BsBucWiLDno way u just talked about ur wife that way 😭
@@QuintonIdellafact LMAOO that’s insane he said a live in bum
This is so good ! I already made this before now I’m making it for Thanksgiving .
After being away from the kitchen, for some time, I've gotten the need to try something, I've made up my mind to try apple pie. You can't really find a really good pie at the store anymore, so, I'm going to make one myself. I'm using your pie filling recipe. It looks really good. After a couple try's with premade crust I'll be trying with your short bread crust, It sounds so good, so thank you so much for the vid, it's going to be a big help.
I love my Pampered Chef apple peeler, corer, slice.

I feel like we are hanging out when I watch these! Great video, Im gonna try it!
You are an authentic person ❤️❤️❤️
Thank You, looks delicious!
I've seen this recipe written by melting butter in pan, add cornstarch or AP flour, add spices, sugars and cream and heat until thickened stirring constantly for 1 minute. Set aside to cool. Then add to apples and stir in. Put in pie shell, if 2 crusts give egg wash and bake 425 for 15 min, turn down heat to 350 for another 45 min.
Try a melon Baller, it worked great cut The core right out. I made your recipe it was delicious and easy thank you for sharing and caring!
I can’t wait to make this
Pampered chef used to have an apple peeler corer slicer that was worth the money not sure if they still have but a must have
Can't wait to try this, looks delicious!
In the instructions you say to use 1/2 cup cream, but in the video you use 1 cup. Which one?
This looks lovely thankyou.i got a lot of apples I need to use before they go off x
This is the only apple pie filling recipe I use. I absolutely love it and made it again today. Thank you for sharing this with us.
I surely hesitate at first because the corn starch wasn’t diluted first and I haven’t made it that way ever but it is AMAZING … I used Granny Smith apples and a little less sugar for my taste it was Exactly spot on in every way! Love it! Thank you so much for sharing this.
Dimitra thank u with all my heart ❤
You're so welcome!!! 💙
Pampered Chef
This is a super awesome video it's very helpful for making apple pie tart thanks.
Best one I've seen Thankyou
Looks delicious
I have the machine, because it’s great for potatoes. I don’t peel my apple, but it does a great job.
Oh, my God! This is good. Thanks for sharing.
Looks so delicious! If I make this filling for an apple pie, do I need to blind the pie crust first so it does not get soggy, or will it be alright to place the filling into an unbaked pie doe shell?? I have been nominated to make this Thanksgiving Apple Pie and would really appreciate advise from you or anyone who has made a pie with this filing. Thank you for this wonderful recipe ❤️
I haven't made this recipe yet, so I can't say for sure, however, Rachel Cooks With Love has a good looking recipe as well topped with pecans. She says to let the filling cool before you load the pie dish so the bottom crust won't get soggy. She doesn't use cream, so I'm not sure if that would make a difference. I'm going to try both recipes.
As long as you start with at least a room temperature filling and bake at 400-425 (depending upon your oven, pre-heated) your crust will be just fine. It should not get soggy. I’ve made more apple pies than I can count.
Gréât. M'y only request is that you say measurement for thé butter. 'A stick of butter' basse no meaning where I live.
1 stick of butter is equal to 1/2 cup. If you don’t use cups to message just google to convert to your preferred measurement.
Dimitra mu fantastic i have made so many of your cakes pastries food your the best
hy not use an apple slicer? It cores and slices in one easy motion. One and done.
Dimitra can I store my filling in a freezer bag and put in the freezer? are would it be better to but it in a canning jar and just refrigerate?
If you don't have enough corn starch I used flour and it wouldn't get like yours old I find middle s l ice I'd not the answer, thank you for sharing oh yea 10 apples is a must
I wonder if I can add a tsp of rose water!
Love your recipe. I wait to make apple pie empanadas. Other then cutting the 🍎 in quarters. What tips would you recommend. Want to make a dozen or two and do you have any ideas on apple and cheese
Would the pie filling work using fresh peaches instead of apples?
I’ve never made an apple pie but my question is I can do the filling first on the stove like you did and then fill the crust and bake it for an hour and it wouldn’t make the apples too mushy?
Could you use sweetened condensed milk for the cream? how would adjust the recipe?
Delicious
How long do you cook the pie after you put these ingredients in?
Used this recipe to make my first apple pie this week. Did you not add lemon juice because of the cream? Or why? Thanks
How do you store it? You can’t freeze It can you?
I understand the appeal of baking an apple pie with raw apples and sugar baked directly inside of the crust, but I always make a filling on the stove with corn starch in order to avoid there being a huge space between the filling and the top crust once everything's cooked.
Can you can apples made like this.
What's the best Appel to use for the recipe
Gala are my favorites. But any of the following will also work: Granny Smith, Braeburn, Yellow Delicious, Pink Lady, or Jonagold.
Ok thanks
No nutmeg or ginger? hmmm
Want to make them for Christmas with a side of vanilla bean ice cream
How many grams of Butter? How much does your stick of butter weighs? Thank you.
Hi ..i was woundering if çanning this sauce is ok 😊
Can I use something in place of heavy cream ?
What can I use if I do not have cornstarch?
Maison Huis makes a great apple peeler/corer. Amazon is like $15
我試過最好吃的蘋果派🤤😋😋😋比餐廳的好吃喔⋯🇹🇼🇹🇼🇹🇼🇹🇼🇹🇼
How much cream?
How long can you store it
I just wanted to thank you so much it was a perfect recipe and great instructions mine turned out perfect doyou know how long it stays in fridge and ifucanfreeze
This keeps fresh in the fridge for a very long time. I've had some leftover for weeks and it still tasted delicious :) I've never tried freezing but canning would be perfect!
@@DimitrasDishes thanks for the info my strudel turned out magnificent perfect recipe
I can’t find the recipe . I went to your web site . It kept freezing . Can’t find it on Pinterest. Bummer
Hi what is the heat level?
When you say heavy cream, do you mean heavy whipping cream?
How many quarts on the video before this make?
It looks delicious fabulous darling I'd rather have your recipe instead of that what's his name Bon appétique as the same French keep on cooking baby
kitchenaid make a apple corer peeler slicer
THose apple peeling gadgets require perfectly shaped apples placed perfectly centered, otherwise the blades skip. Ive tried several. Hand paring is not that big of a deal.
Manzanita
👏👍
What happened to the nutmeg.
oh you should add a little bit of lemon to this
I’ve never seen a 5 gallon bucket before 🙃🙃
Your demo uses 1 cup heavy cream.
Your printable recipe calls for 1/2 cup.
No lemon 🍋?
Make a full video wth
Your so pretty :)
Instead of 1 stick of butter I like to use buttered milk
Mine actually needed extra water. It got clumpy
3:30... apples are cut and the recipe begins
Click on blue walls
Wow ‼ I want to eat it in the fall. it looks tasty. Thank you very much. from Japan 💛💛💛💛
seems too much sugar. could half the amount still taste ok?
No No, don't ever use one of those peeler/corer machines unless you want to ruin your pie filling. The problem with them is that apple cores aren't actually cylindrical in shape; they're a bit bulbous. So if you use one of those a bit of the core will be left behind and totally ruin the texture of your filling.
This is a lovely recipe I will definitely be using this one to make your apple tart. I have one of those handheld gadgets that just coars the Apple. It slices them well enough and then from there I slice them thinner.
Mix all your dry ingredients 1st. I would leave out the corn starch…. Put in a coffee mug add a small dash water. Stir cook apples first w everything else, add cream warm through and then add the liq corn starch! Stir till thickened. Remove from heat
tq for it.wanna do this 😊
No.
I would imagine Dimitra's takes a more simple approach
Explain the coffee mug please?
What can i use instead of corn starch? I don’t have that
Hello. I made this apple pie filling recipe yesterday for Sunday family dinner and it was a huge hit! I highly recommend this recipe.
Good to hear I’ll definitely try this
Thanks for sharing this posting. It’s looks so good. 👌🏾🙏🏼
I love a sweet but tart apple 🍎 pie filling so can I use Granny Smith apples 🍏 or if mixed which apples is best to use for a sweet tart flavor?
Granny smith and Gala. Avoid the red delicious/yellow delicious as they get too mushy 👍
To us Greeks, cinnamon is in everything!😅
Made this today and it’s delicious!
Soo yummy I just want to pour some hot custard on top with a sprinkle of cinnamon and dig in!💜
You’re the best Dimitra ❤️
Thank you for being here!!
No nutmeg or vanilla??
I got a Spiralizer from Amazon for peeling/slicing and I think it worked great!! I'm not an experienced pie maker by any means, in fact, this is my first from scratch apple pie filling. But, the Spiralizer made the peeling/slicing go very quickly. 10 apples in about 15/20 minutes, and it went quicker as I got the hang of the device. The slices might be border-line too thin, but I'm really happy with the results and Dimitra's recipe is amazing!! Full disclosure...I'll use a Pillsbury crust just because I know my limitations. I think it's gonna be a tasty pie!! Thanks!! ~Frank
