Having said that and having seen Dimitra's recipe here above, I'm pretty sure there could be plenty of apple pie avenues yet to discover. I went out today and scored some fresh fruit to try out this recipe. I can't wait!
Dear Dmitra, you are right, this is the best tasting apple filling I ever made. Everybody who gets some tells me it is the best they ever tasted. I do have some information for you in return. There is an apple corer/slicer/peeler that has been around since colonial times, and is a whiz. In seconds, apple is cored, peeled and sliced as you turn the crank. Very simple mechanism, no electronics. RUclipsr Oliver Porter gives an invaluable tutorial on how to use one, get the slice size you want, adjust how deep the blade goes into apple, etc. We had a couple at our bakery and they saved our lives. Young kids could turn the crank and peel hundreds of apples for us. As to model and price, that will depend on what you need. Some attach with a clamp, good if it fits your counter, or with a suction clamp that does lose its ability to hold over time. There are ones cast iron coated with porcelain, stainless steel, etc. I tend to avoid the really cheap models from China, that come in $20 range. Pampered Chef is ridiculous for $64, they provide a little wooden table to clamp the unit onto, totally extraneous if you have a table or counter top. I would check to see that the slice thickness is adjustable, peeler, too. Bed Bath and Beyond has one for $39.99, but the slice is 1/8", and I couldn't determine if the blade is adjustable. Kohl's has a stainless steel model, $34.99, with a 3/8" slice, couldn't determine adjustability. You might want to squint and see what model Mr. Oliver is using. I recommend whole-heartedly that you purchase one of these to save you endless hours of preparation. If you ever get back into professional baking, buy several. Above all, watch Mr. Oliver's video. He showed me how to do things that I didn't know in the past, but would have benefited from. Thanks again for your champion recipe. I hope you'll let your followers know if you do get one of these, and how you like it. Cheers! PS, I made a Dutch crumble topping with butter, flour, brown sugar, white sugar, oats, pecans and walnuts. Grand!

Mix all your dry ingredients 1st. I would leave out the corn starch…. Put in a coffee mug add a small dash water. Stir cook apples first w everything else, add cream warm through and then add the liq corn starch! Stir till thickened. Remove from heat

I got a Spiralizer from Amazon for peeling/slicing and I think it worked great!! I'm not an experienced pie maker by any means, in fact, this is my first from scratch apple pie filling. But, the Spiralizer made the peeling/slicing go very quickly. 10 apples in about 15/20 minutes, and it went quicker as I got the hang of the device. The slices might be border-line too thin, but I'm really happy with the results and Dimitra's recipe is amazing!! Full disclosure...I'll use a Pillsbury crust just because I know my limitations. I think it's gonna be a tasty pie!! Thanks!! ~Frank
This is a lovely recipe I will definitely be using this one to make your apple tart. I have one of those handheld gadgets that just coars the Apple. It slices them well enough and then from there I slice them thinner.
Omgoodness! I had a bunch of excess apples so I decided to make apple filling to save. I ran across your video. Did everything you said except didn't have heavy whipping cream so I substituted evaporated milk at same measurement. I filled my containers at 2 cups ea. It made 6 full cups. And,.. I got to lick the skillet! Hahaha! 😂 So very tasty! Thanks for the recipe. Will do it this way from now on!

You can't really find a really good pie at the store anymore, so, I'm going to make one myself. I'm using your pie filling recipe. It looks really good. I've seen this recipe written by melting butter in pan, add cornstarch or AP flour, add spices, sugars and cream and heat until thickened stirring constantly for 1 minute. Set aside to cool. Then add to apples and stir in. Put in pie shell, if 2 crusts give egg wash and bake 425 for 15 min, turn down heat to 350 for another 45 min.
i have been making my apple pies since the late 80s/early 90s and everyone loves it. the only thing is that the pie is really watery until it sets up for a few days. was looking for a video of how to reduce the apples but came across this video. gonna try this and see how it turns out.

I just made this recipe. Feedback time! 1. Type of apple REALLY matters with this. She's using only Galas here which are pretty hard apples and can easily withstand some pre-cooking. Some people use several types of apples in a pie so the trick is realizing that the softer apples like Golden Delicious can't handle the heat the way the Galas can, so they should be added a few minutes later. 2. You have to watch this pan like a hawk, otherwise you've made applesauce, no freakin' joke. It happens REAL fast. 3. Last comment is that you really do need 10 good sized apples for this recipe otherwise your apples will be swimming in sauce. Would have been nice if there had been some indication for how many 9 or 10 inch pies you can make with this. I only need to make one 10 inch apple pie but had way too much goop and had to send search & rescue to dig my apple bits out. Tasty recipe though. Next time I'll either plant to make two pies or reduce this recipe by 50%. Live and learn. Anyone else have some tips?

You could just add 1/2 TBS vanilla to the cream......without all the other factory additives that are already in that ice cream.

1 stick of butter is equal to 1/2 cup. If you don’t use cups to message just google to convert to your preferred measurement.
