Add to the pasta back to the pan mix pan dripping and egg mixture done enjoy hope this helped. Also you can watch the video for guidance and also look up the recipe online that is close to this one and go that route. Best I can do for you.

Why do so many people use heavy cream as a substitute in their carbonara? I'm happy to see that she didn't, but I wonder why everyone else does in their recipes. My husband is italian, and he made it for me similar to how she is right now. It was beautiful. 😊
Do not use heavy cream! If there’s no pecorino Romano try to use grated Parmesan. If you invest in good ingredients it makes all the difference. I spent $18 on guarnciale and it was well worth it. Still cheaper than eating out and having to tip.
According to the grapevine? Cream came about in the USA at restaurants for two important reasons. 1) Bulk cream makes the dish cheaper by diluting it but 2) this being the clincher - it's a stabilizer agent. Make a huge pot. Leave it in a warm spot. Ladle at service over spaghetti, into the pan done. Customer doesn't have to wait 😊

My guess is it's because pecorino is quite expensive and not easily accessible everywhere, so you need something else to make it creamy.
