Tonight I made this dish for my family and only modified the quantity of eggs to 2 yolks+1 whole egg. The technique was much simpler than other recipes I’ve tried and the result was a delicious, creamy and complex dish. 🙌🏻🙌🏻🙌🏻

I love watching italians watch chefs throw in peas, parsley, bacon, cream etc to make cabonara. Its hilarious and Nadia is no exception. Its simple the way she has made it and the western versions just crucify it.
I did it! I have to work on the consistency of the sauce though. Mine turned out to be quite liquid. BUT! The taste was like in a restaurant!! And I have eaten a lot of carbonara in my life :)

Yes, that's how my husband makes it, and he's from Rome (his mother is from Monopoli), and it comes out creamy. I prefer it this way because it makes me feel like the egg yolks are cooked 😂

Just put an half clove of carlic to the guanciale. This gives really a very good taste and fits the carbonara very well.
