Nicely done. Your using the butcher paper was very clever; glad it worked out for you. When making skirt boards so many guys say, "just do the math." But math doesn't always work on a renovation; you can't trust that the stairs were built correctly and consistently in the first place.
We used stone polymer composite flooring. It comes in flat planks and bullnose planks. The bullnose plank covers the stair nose of the steps. A quick Google search of bullnose stone polymer composite should show you what I mean. I hope that helps. Good luck with your project.
Does it make sense to do this without removing the laminate floors that have already been put in place? I am guessing only problem would be is that if I ever run into a problem with the laminate floors, I would need to remove the skirt in order to remove the laminate.
