I love how the online doc, as far as I have understood, doesnt even talk about education, as in you need a masters and experience in the field. I was close to putting in the time and money to get all the medical examinations etc. after reading the doc.

Under the doc I was pointed to by another youtube video (esamultimedia.esa.int/docs/careers/ESA_Astrosel_Handbook.pdf) I could not find such a requirement and I laready was asking myself about that because it seemed kinda weird that everybody with no experience whatsoever was encouraged to apply.
This is what the application page says: "Please note that applications are only considered from nationals of one of the following States: Austria, Belgium, the Czech Republic, Denmark, Estonia, Finland, France, Germany, Greece, Hungary, Ireland, Italy, Luxembourg, the Netherlands, Norway, Poland, Portugal, Romania, Spain, Sweden, Switzerland, the United Kingdom, Latvia, Lithuania and Slovenia."
I am from Poland and I do well at school, I'm fluent English, maybe in the future I could at least join ESA.

Yes, you need to be a citizen of one of ESA's member state's. I replied to another comment listing them out
