      I posted about this on this video but heads up folk, the discount code only seems to work if you're not using their subscription service (which everything on the site seems to try to push on you) and won't include free shipping because the cost before taxes and shipping will be lower than 50 if you're only selecting 5 items.

      True. In this neck of the woods my tub of 'Double Thick Heavy Cream' has 1.6 carbs of which sugars 1.6 carbs per 100 grams. I doubt our cows are much different to your cows. I still like keto friendly mousse so will NOT be stopping making it any time soon carbs or no carbs. T'is so delicious, I have just made a batch and added some chilli. Not enough to really taste but just enough to make you wonder what's in there.

      @@jjudy5869 no. Our bodies don't use calories at all. They're lab created values, determined by burning foods to find their energy content. We don't burn our food when we digest it. We get energy from carbs, fat and protein, not calories.

    Two comments, Wes; 1st, when melting chocolate chips (which I do a lot) I use Medium setting on the microwave. Keeps it from seizing. 2nd, if you don't care for the taste of chocolate+cream cheese, use mascarpone cheese in place of the cr. cheese. No tang!

    I’ve actually made both of these on my own. Chocolate whipped cream and sometimes with cream cheese. It’s really good made with lemon. Mmmmmm... I also do the lemon cream cheese/ whipped cream with blueberry sauce .

    Awesome, I like to use avocado as the base, use a food processor to make the avocado smooth, then add special dark chocolate powder, 1 Tbsp per avocado, 1 Tbsp of your favorite sugar substitute per avocado, and then add heavy whip cream as you like. (A touch of freeze dried coffee will help bring out the chocolate flavor.)

    When I worked in a bakery, if we ever had chocolate seize, we would loosen it back up with solid shortening, 1 tbls per 8 ounces chocolate (for baking purposes), for drizzling, we would loosen it with boiling water, 1 tsp at a time and mixing very vigorously until it loosened. You of course wouldn't want to use the water if baking because it would affect the liquid in your recipe.

    Wes, the face you made when you tasted Chef Michael's mousse is the same face I made the first time I made and tasted Pierre Franey's (NY Times, decades ago) version of chocolate mousse. I was done with puddings. A life-changing experience! Now I have to see how far off from keto compliant it actually is...or I will just make Michael's LOL. I need to make that face again!     I have been making one like Chef Micheals but I use cocoa powder instead of chocolate chips but I going to try it his way next time. Thank you for trying out all these recipes. It helps to weed out the best recipes out there.

    Thank you for saying that about the heavy cream and carbs! I feel like no one understands this! I use My Fitness Pal to track my food and it always counts 1 carb per tablespoon of HC. My family drinks lactose free milk and there's 13 grams of carbs per cup in that. Everyone seems to demonize milk, but HC can actually be just as bad when considering the carbs it has.

      I had the same issue with the oat milk creamers. If you only use a tbls you are under, it says no carbs. But if you use a few a day, like I do in my coffee or drinks it will add up. Apparently oat milk makes its own carbs during the process used to make it.

    Oh thank you for trying these out! I've looked at a lot of mousse recipes and always end up putting it off because I'm worried about wasting those expensive ingredients if it's not good. But the look on your face says it all! I will definitely be making Chef Michael's recipe.

      Lucinda...yeah, that one that has the bacon on top. I add more seasonings than called for, but it’s wonderful!! My husband loves it, too! If you do make it...instead of trying to make a loaf in plastic wrap and flipping it...I found it easier to just lay the bacon over one side of the pan (bottom edge of bacon touching inside bottom edge of pan) and let the rest of bacon hang over the outside edge. Pat your loaf into pan, then pull bacon over top and tuck down inside other side of loaf using a butter knife.

    You HAVE to do Maria Emmerich’s version. It uses BOILED EGGS! Sounds so crazy, but it’s delicious and no one would ever know. You do have to let it sit in the fridge overnight to allow all the “eggy” taste to go away. Love your channel!

    Glad to see the KitchenAid over the hand beaters. I hate the hand beaters my mom always used. My first kitchen counter appliance 30+ years ago was a KA mixer. I am on my 2nd only bc I needed the larger capacity. I am saving my smaller version for one of my kiddos when they move out.

      It was sort of a mix of both. LOL. It was not NEARLY as granulated as say, Swerve or Lakanto granulated erythritol, but it wasn’t “confectioner’s” powdered either. Somewhere in between. (It was the Besti brand by Wholesome Yum. No grainy texture at all in the final product, so it apparently dissolved.)

    Using cocoa powder with 3g of carbs per tbs rather than melted dark chocolate chips/sugar free chips with 8-9g of carbs per tbs seems like better choice. Obviously, you would need more sweetener, but you can cutback on the sweetener to control the carbs and customize to your liking.

    You can save seized chocolate by adding unmelted chocolate in small increments and stirring. A small amount should suffice.

    Your enjoyment of food, makes me wish we could cook together. Thank you for mentioning the carbs in HWC. We often don’t know we are sabotaging our weight loss efforts because of the US labeling laws. Also why I won’t be using Allulose, low carb but it throws me out of ketosis. Perhaps a hybrid recipe for me the 5 minute mouse with Lilly’s chocolate instead of cocoa.... thank you for testing and inspiring me to stay in a low carb lifestyle. Sift y’all.

    I've made Michael's recipe about a half dozen times now. I've experimented with different flavored chips too. @ white chips, milk chocolate chips, and half white/half pumpkin spice chips. All were delicious. And so easy. I'd like to try peanut butter chips if I can find them. Thanks!!

    me and my niece were just talking about wanting mousse. the 2nd one you made is pretty much how i make chocolate whipped cream minus the cinnamon. i don't know that i could eat a whole bowl of that.

    I made Chef Michael’s recipe and poured it over a pre baked Sweet Almond crust and topped it with vanilla whipped cream dusted with cocoa powder. I was amazing! Thank you for the inspiration!!

    I just made Chef Michael's version, but I cut it down to one-fourth of his recipe. No way would I trust myself with an adult dose of this! I even ordered the fancy-pants flaked salt! It's chilling for 30 minutes, and this Gramma is watching the clock!
