@@pattijesinoski1958 you don't have to let the dough sit in this recipe. You want to keep the extra moisture so the monkey bread turns out light. Usually if you just dampen your hands that eliminates any stickiness
I tried Swerve, but I don’t like the cooling effect. However, I use either So Nurished or Amson Naturals Erythritol sweeteners as I find they do NOT have the cooling effect. Unfortunately, I am allergic to both Stevia and Allulose. So, I will try both recipes to see which one I like better. Thanks, Wes!
Oh my goodness gracious! I have made monkey bread so many times but since eliminating sugar from my diet over a year ago I thought it was hopeless and that I would never be able to try it again. I never thought to formulate it with swerve or any other substitute. I truly appreciate this!

Hey Wes- I just made that second recipe with coconut flour and did reduce the sweeteners: I used 40 g of Allulose instead of 44 g For the cinnamon sugar mix, 65 g of sukrin gold instead of 95 g, and 40g of sukrin gold instead of 44 g for the last brown sugar substitute measurement. Mostly because I was running out of brown sugar sweetener and that’s how I divided it up. It’s plenty sweet enough without being overpowering and still has good flavor. Mine fell apart too when I dumped it out the Bundt pan, but it still tastes good!

I just made the best keto maple syrup the other day. It's so good! And I used beef gelatin powder instead of xantham gum to thicken! I saved my glass maple syrup jar from a store-bought organic maple syrup that was made with Allulose. I poured it in that and it's gorgeous I leave it on my kitchen counter :-) The syrup so far that I made is probably the best keto syrup I've ever had... Now my husband is requesting raspberry flavor!! Happy🍁 fall 🍃y'all!🍂! 💚🧡💛
Do you share your recipe? My husband loves the keto Birchbenders pancakes, but keto syrup is expensive. I put blueberries in his pancakes, but raspberries sound yummy too.
@@hollyhock3945 I did not use swerve I don't use swerve I feel there's additives in it. My sweetener I used also was not a "brown type" sweetener. I don't care much about the color but even though I didn't use a brown sweetener I still got a gorgeous color!

But the bottle I used is from the simple truth organic maple syrup made with alulose which is pretty good for store-bought and cheaper than the others. I just saved the jar took the label off and used it for my own :-) If you split this recipe in half if it's perfectly in that jar!

My family have always just called these Cinnamon Pull Apart. We called the pull apart that have cream cheese in the middle of each ball is what we call Monkey bread

Regarding the too-sweet sauce in the second recipe, would a *dash of salt* before heating balance/offset the sweetness? I've found this frequently when using sweeteners vs. sugars in keto cooking. Just a thought.

I used to make a vegetarian one (aqua faba) with pretty much any type of bean juice. But you have to have a really powerful mixer. If you don't have a KitchenAid mixer, I would try an immersion blender. But, egg whites should be keto? What are you using as a sweetener? Just don't use anything wet. Regular meringue with egg whites should be easy.
@@HealthyAmbitions I'd rather go savory. Monkfruit and Stevia taste absolutely awful. Ive had a fresh leaf if stevia straight off the plant and it tasted like I ate a packet of sweet n low by itself. For hours. Monkfruit has an odd taste to it, too. Why is that?
Great video! Still watching; but I had to say thank you for finding a non-fathead dough. When I first started keto almost 3 years ago the amount of mozzarella I went through was ridiculous; definitely try to avoid eating that the crazy amount of cheese you get from fathead. If you have the space for a larger food processor they are awesome. I love the shredding disc for cheeses along with dough items, making homemade granola, etc. works really, really well and cleanup is a snap. I have the mini one you have and a larger Cuisinart and I still use both of them.

Any time I make a fathead dough, I always mix it in my Kitchen Aide mixer with the paddle. WAY easier, and way more of an even mix than doing it by hand.
I think I’m the only person in the world who always thought “meh” when I heard Monkey Bread! Someone I worked with loved to bring it into work about once a month and everyone went crazy! I wonder if I’d like the keto version better?

I like her because she uses coconut flour primarily for everything which is awesome… It’s much less expensive than almond flour and you don’t need to use ss much so it’s a money saver.

We just call them pull-aparts here in NZ. I would be tempted to use Allulose for the sauce - just watched Serious Keto's caramel sauce. Yummo. Ordered the book and it arrived in New Zealand 6 weeks ago - still waiting for it to be delivered. Amazon/Aramex is the pits.
I just made the fathead dough recipe & it was a hit, but seemed like it took longer to put together than you made the 2nd recipe look. Next time I’ll do the 2nd recipe & let y’all know how it goes. Oh, and I made mine in my new silicon mold. I’m not used to it yet. The middle of mine wasn’t as firm as it would have been in a normal metal mold, but I could be wrong. The top was beautiful, but once it cooled & I turned it over to plate it I realized that I should have cooked it longer, or something. I’m still working to figure out silicon molds.
hey Wes... can you try a few psmf breads/cakes/pizza dough/etc recipes? they seem very helpful for those of us who have decided to count total carbs instead of net carbs.
No offence to Maria since the original recipe is hers, but there are much better ones that aren't as expensive to make. Ketogenic Woman, Indigo Nili and Loving It On Keto all do variations...I kind of made my own off of theirs.
monkey bread is heaven on earth, before keto we would take plain can biscuits, cut each piece into 4 pieces, roll them into a ball, then roll into a cinnamon/sugar combo, place the balls into a bunt pan ( with pecans ) then take a few sticks of butter, add cinnamon, pour over and bake!!! its the lords way of saying I LOVE YOU MY CHILD LOL

I'm always confused about sugar alcohols. Most videos i see say "we won't include those". But from what i understand sugar alcohols count as half of whatever the amount is. Example something has 8g of erythriyol per serving. You should count 4 of those grams as carbs that DO get absorbed into the blood. Or am i missing something?

Shouldn't he have taken the dough out of the food processor and let the dough sit for 15 minutes to absorb the liquid before working with it?

@@zeldapinwheel7043 Polyol sweeteners don't do the same as Sugar in meringue... They "go wet" rather than "get set".
I've used powdered Lakanto Monk Fruit Blend with good success for keto meringue cookies :)

I think I’m the only person in the world who always thought “meh” when I heard Monkey Bread! Someone I worked with loved to bring it into work about once a month and everyone went crazy! I wonder if I’d like the keto version better?
I have always thought the same about monkey bread. The idea of it always sounds better than the end result tastes. I doubt a keto version would improve it, lol.
Would you recommend bocha sweet or allulose sweetener as an alternative? I’m not a big fan of erythritol.

I absolutely LOVE Janets RUclips channel. If you are a keto eater than her recipes are not going to disappoint! Her mini cheesecake bites are THE BOMB! I’m gonna have to try that monkey bread mmmmmmm 🤤
I like her because she uses coconut flour primarily for everything which is awesome… It’s much less expensive than almond flour and you don’t need to use ss much so it’s a money saver.

We just call them pull-aparts here in NZ. I would be tempted to use Allulose for the sauce - just watched Serious Keto's caramel sauce. Yummo. Ordered the book and it arrived in New Zealand 6 weeks ago - still waiting for it to be delivered. Amazon/Aramex is the pits.

I just made the fathead dough recipe & it was a hit, but seemed like it took longer to put together than you made the 2nd recipe look.
Next time I’ll do the 2nd recipe & let y’all know how it goes.
Oh, and I made mine in my new silicon mold. I’m not used to it yet. The middle of mine wasn’t as firm as it would have been in a normal metal mold, but I could be wrong. The top was beautiful, but once it cooled & I turned it over to plate it I realized that I should have cooked it longer, or something.
I’m still working to figure out silicon molds.

No offence to Maria since the original recipe is hers, but there are much better ones that aren't as expensive to make. Ketogenic Woman, Indigo Nili and Loving It On Keto all do variations...I kind of made my own off of theirs.

monkey bread is heaven on earth, before keto we would take plain can biscuits, cut each piece into 4 pieces, roll them into a ball, then roll into a cinnamon/sugar combo, place the balls into a bunt pan ( with pecans ) then take a few sticks of butter, add cinnamon, pour over and bake!!! its the lords way of saying I LOVE YOU MY CHILD LOL

I'm always confused about sugar alcohols. Most videos i see say "we won't include those". But from what i understand sugar alcohols count as half of whatever the amount is. Example something has 8g of erythriyol per serving. You should count 4 of those grams as carbs that DO get absorbed into the blood. Or am i missing something?
Keeping your flour in the freezer is why you need to sift. if you don't often bake, I suppose you need to keep your flour in the freezer.

Coconut is a fruit (technically a “drupe”) and not in the “tree nut” category of allergies. (Just be careful if you ARE allergic to nuts, because it may be processed in a facility that also processes nuts.)
