Fathead dough is like going down the rabbit hole. Sooo many possibilities. Pizza crusts, hand pies, empanadas, calzones, bagels, Danish, cinnamon rolls....on and on 😅
I tried using a flour blend that has oat fiber in it. FAIL. Had to throw that mess in the bin - the fiber sucked up all the fat and the dough clumped into rubber spots instead of melting together. I might use a touch of oat fiber next time though, to suck up SOME of the fat - they are greasy to eat. Still enjoyed my first try!
Glad you finally found Fathead. You will have So much fun. I've made sandwich rounds , whic are just like cinnamon rolls but with meat and cheese inside. Hot Pockets, Pizza crust, pot pie crust. It is vey useful.
With the fathead dough I've been making for three years...you microwave the cheese and cream cheese, like you did, but you add the flour, seasonings, and egg AFTER the cheese is melted. I dump in the flour, then the egg. Since the egg hits the flour, you don't have to worry about the heat.
When I make fathead dough, I microwave the mozzarella and cream cheese only. I add almond flour, salt and egg together. It’s easier to mix that way imo.

I'm going to try cutting the strips into kinda triangle shapes. That way it would look even more like crescent roll dough. Going to make it for the company pot luck.

However, I still think I’m going to make my Thanksgiving dressing with the fathead dough, because it’s our favorite. Even family who aren’t keto love it! 😊

Thanks for sharing this! One: I cannot believe that you never tried fathead dough. Two: I love the way you need the cheese and almond flour together. I melted the cheese first and then added the almond flour after and didn't care for it. I'll try this way and see how it does for me. 💗

Just made these and after making the mistake of using wax paper to roll out, I was able to assemble the dough around the little smoky sausages. Baked up perfectly and tasty just like crescent dough not as dry as a biscuit! Perfect for a low card lifestyle thank you!
Do any of you use it to make like a hot-pocket pizza? I'm thinking of doing so. Someone recommended to NOT put the red sause inside because it won't work so well but use the sause as a dip afterwards.
Hey Indigo! I've found if I lay my parchment paper on a silicone mat when rolling, it prevents the parchment paper from sliding around on the countertop while rolling. Just a tip I learned!😊 looks yummy!
I love your egg bread variations but I can't get past the almond flour flavor. Almond flour and coconut flour, not a fan. One of the few low carb foods that I have not thrown in the trash is your egg bread lol

I made them! I made them! Really good, if you discount the greasy hand feeling after you eat one, lol. I think I'll try them with lowfat cheese - actually I found some NOfat mozz at Walmart that oddly does melt like it has plenty of fat. Have to keep my fat grams under 50 a day. Still, no regrets on these, thanks so much!

I will try these with that because I have a pack of Sabrett’s mini hotdogs in the refrigerator, just sitting there. I think my son would love these but he can’t eat almonds. Allergic to most nuts. I was thinking of trying cassava flour, which I find works as a good sub for almond flour in other recipes.

My wife and I followed the recipe at Just a Pinch, but the dough tore when we tried to do anything with it. Any ideas what we did wrong? Was it just not kneaded enough?
It's great, I just got tired of making it... We have a pizza place in town that has a whole keto selection, pizzas, sandwiches, soups, salad bar and desserts. they use two different types of fat head dough, one for the pizza and a modified version for their breadsticks and sandwich bread, I'm totally ok paying them to make the pizza for me because it is a chore to make... they had to finally outsource the making of the dough to a company, they make it, ship it frozen to them... they were getting in everyday at like 4am to make enough pizza crusts to try and make it through the day... that was not sustainable so yeah. So anyone in the central Indiana area there is a great spot to grab pizza! It's funny to think back at all the trends and how things have evolved since Chandra and I started Keto in 2016... Cloud bread was a huge thing, and then fat head dough, instant pot blew up, then air fryers (which I did not understand at first, I'm like it's ok to fry in oil on keto...), Dash minis with chaffles and yeah... ok... I'm blabbering on so I'll stop!

I've actually done pigs in a blanket with your egg white bread recipe. They turn out great as well.

My only dough is fathead. I make mini pizza dough in my tortilla press and freeze them and cook in airfryer

Me too. Being carnivore, I'm not much into almond or coconut flour. As I recall the original Fathead dough was made with cheese and eggs, no flours.

Don't try pork panko. Makes a gritty mess that is impossible to wrap around the weiner. Also super greasy and unworkable. Bummer.
