He is a celebrity baker that’s why the course is costly. I bought his cake for my daughter’s birthday and it’s the best I’ve ever had in my 36 years of eating cakes.
No patent. Just a young person who has a fair amount of followers and an ego that far exceeds his actual skill level. Case in point - notice he doesn’t create buttercream flowers…. Yes, they’re labor intensive and quite difficult; however, if you produce a multi-tier cake (assumably for a wedding) and simply slap on edible flowers, you’re essentially proving you’re not a true professional. It takes YEARS and YEARS, and many certifications, to get to the level of the Buddy Velastro’s and Duff Goldman’s of the world. There simply are no shortcuts to success. Listen to Elan Musk sometime… you MUST, MUST, MUST put forth the real effort. Then and only then do the fruits begin to bloom.

You need to do some research. Most every if not all famous bakers SHARE all their recipes. Charging for a buttercream frosting recipe and 45.00 at that is business SUICIDE!!!! You might want to rethink that.

Will it hold its shape for piping roses? I always fear going with too smooth of an icing that it will not hold its shape if it gets a little warm.

Butter Cream .. HEAVY CREAM AND SALT when shaken in carton MAKE BUTTER ! Now add a bit more butter and add a preservative 🍋 .. and sweeten it !
ADD A REAL BUTTER THAT HAS A RIND ON IT LIKE CLOVER DALE !! It hardens and stabilizes itself under chill hours
