8g egg yolk
pinch of baking soda
lemon zest
vanilla extract
pinch of salt

50g strawberry puree
1 long sheet gelatin
35g egg white (1 large egg)
25g sugar
10g water
65g heavy cream
🍓 Red Glaze 🍓
Water: 50g
Sugar: 60g
Sweetened condensed milk: 40g
Gelatin sheets: (1.5 long gelatin sheet)
White chocolate: 60g
Red food coloring: 1-2 tsp
Glucose syrup: 30g
Red Gel Food Coloring
Decoration:
Callebaut 55% chocolate chips
Callebaut white chocolate chips
Black food coloring powder
Green oil based food coloring
