Cherries Jubilee on the Blackstone Griddle!!

  • For my last entry into the Dessert category for the Blackstone Great Griddle Off 2023, I'm submitting a Cherries Jubilee!
    I used Cherry Pie filling with butter and brown sugar on the griddle and reduced it on low hear, stirring often. When about 90% reduced, I added Spiced Rum and did a flambe.
    I used a Butter Cake loaf and dredged each side in the same Rum, like French Toast. Also on low heat, I toasted each side on the Griddle.
    Topped the Rum Cakes with vanilla bean ice cream, smothered in the warm cherries.

    Blackstone Products
    Ingredients:
    Butter Rum Cake
    1 Can Cherry Pie Filling
    ¼ Cup Brown Sugar
    4 Tbs Butter
    ½ Cup Spiced Rum
    Vanilla Bean Ice Cream
    Directions:
    Rum Cake
    Slice Butter Rum Cake into 1 inch slices
    Place a small amount of Rum in the bottom of a plate.
    Quickly place each side of Butter Cake into Rum.
    On a Low Heat Griddle, toast each side of Rum Cake until desired appearance.
    Cherries:
    Scoop contents of Cherry Pie Filling onto a Low Temp Griddle.
    Continuously move Cherried and Filling to keep from scorching.
    Add 4 Tbs Butter and ¼ Cup Brown Sugar and continue to mix until fully smooth.
    Allow sauce to reduce by half and become more thick.
    Add in ¼ Cup of Spiced Rum, mix thoroughly.
    Light Rum on fire to flambė
    Plating:
    Place desired amount of Rum Cake in a bowl or plate.
    Add a scoop of vanilla bean, or ice cream of choice, on top of warm Rum Cake
    Scoop generous amount of Cherries on top.

    I really appreciate you posting the recipe below the video. I can't tell you the number of times that I have tried to find the recipes from the other cooks that CLAIM the recipes can be found on the blackstone website. I have searched many times without any luck. If they would just post a link to the recipe, I would be happy!

      Thanks. That's part of the reason I have been putting the recipe there, as well as trying to show all of the ingredients at the beginning of the video.
