Hi guys! Constructive feedback here. The reason why your steaks aren’t getting that crust regardless of butter and temperature, is because it’s an oven not a grill/pan. The pizza “crust” is due to yeast and flour reacting to temperature hence why it expands to the point it hardens. Any more then it begins to burn. Hence why a pizza is done in three minutes tops in a stone base oven. Steak is a meat, all you’re doing is raising the internal temperature. There’s a difference between charred and burnt for that reason. Steak only gets it crust because it requires direct contact heat, which an oven is not. Hope that helps, but… I’ve never seen a steak cooked in a pizza oven so I was learning along side you too! It was very cool!

I think that if you have more butter in the pan there's less contact between the steaks and the metal and the hot metal is what forms the crust not necessarily the butter and that's why it didn't crust. essentially it was boiled in butter instead
different cuts and thickness also play a factor in tenderness. try sirloin 1/2 to 3/4 cut lite season hot sear both sides, lower heat or off set from heat, 200 or 250 for about 5 to 8 mins. talk about juicy!!!
I think about a half hour is a good time to shoot for for the public releases if you're sticking with this Patreon thing. Personally I think Patreon is best suited to things like bonus content like an after show or recipes and early access, not cutting your content down
