    the filling sounds wonderful.....can't wait to make it. Just a little tip, slice a small piece off the other end of the squash so when you turn them over to stuff, they will sit flat and won't tip. I placed an order for a bunch of your products and they got delivered last week. Have used the StarDust and Banana Pancakes so far and both are great. Have a lot more to try.....Thank you both for all you do!!

    Love the way you love your food. This is the perfect recipe for holiday meals. Anytime, really, but just planning ahead. Another little tip. I cook them just like you do, rim side down. I use a non stick cookie sheet, and no water. The edge gets some nice browning. If you like that, it adds a little flavor. Yum. Thanks for the vid. Love the new do!

    Try just sticking the whole squash in the oven without cutting or taking out the seeds. It makes it much easier to slice and scoop out after it’s done cooking and I think it roasts sweeter that way :-) then you won’t need any water and you won’t need to cover it either.

    Would like to try this in a butternut squash, or top a spaghetti squash with spaghetti veggie chunk sauce like this. Acorn is my dessert squash ✌but I absolutely love everything you two do!

    I make something simular, but I always dd a little lentil for extra protein. Looks yummy. On the side there's an advertisement for your mushroom gravy; I think that gravy would accompany these gourds well.

    I always cut them the long way too. But look how cute and flower like they are when cut the short way! The short way is my way from now on, should make a cute presentation ;-) Thanks!

    The short way is prettier. I do them in the instapot. I have a whole bunch of different kinds of grains. Thinking I will try mixing them. I have dried barberries which I think I would like better than raisins. To quote joon which is one of my favorite quotes about raisins that I agree with 100%: "They used to be fat and juicy but now they're twisted, like they had their lives stolen." " Well, they taste sweet, but they're just humiliated grapes..."
    Love the sound the stardust makes when being applied.

    made our own version last nite.....quinoa /apple great choices- hadn't thought of those- we used barely/onion/garlic/carrots/grn cabbage last nite (along with crispy crumbled impossible sausage
    ....and like you said.....winter spices...cinnamon/nutmeg/Sage/rosemary/thyme/parsley/oregano/red pepper flake.....🌥skies the limit - thanks

    Ooooh, I want to try this recipe. Here's a tip when baking squash: cut a bit off of the bottom of each half - just enough to help out to sit steady without tipping when you flip them over to serve. (Is this a tip or is this an anti-tip)? Take care to only cut a bit off and not cut through to the hollow center. Then when it sits on your plate it won't wobble around while you're trying to eat it.

    raw cranberries will be in season soon. Substitute a microwave for that oven and the cb on this project significantly improves. Just barely flatten the bottoms of those squash halves with your knife and they won't tip over so easily...not that it matters though because, like my father loved to say, "It's all going to the same place."

    Yum. I’m thinking the extra stuffing might be good for filling jalapeño poppers… that sweetness of the raisins and apples against the spiciness of the peppers.
    Oh, and a little parallel to topic… I have your ketchup, and added some [Mrs] Dash garlic & herb + Southwest Chipotle to it. (I just add it to the bottle and shake, and wait for it to marinate). It’s delicious, and my go-to sauce. I’m thinking your herb blends would be awesome mixed in it.

      Hi! Our Stardust is a salt substitute. It has herbs and spices and it is delicious! We also sell a cheese alternative, called "Cheese Sauce Mix."

    You can blend the seeds with water (about 1:3 ratio) and make milk. The okara can be used as compost.

    Served it last night for early Thanksgiving dinner for my family who are all carnivores. Everybody polished off their plates along with roasted veggies cooked by my son. I used Herbs de Provence as seasoning and it was delicious. I forgot to put the parsley into the stuffing, so used it as garnish instead and that bright green made the dish look lovely. Will make again for sure. Your video made it look idiot proof, and it was for this idiot. Daughter-in-law made lovely leek and potato soup as an appetizer, so everyone was full up with barely enough room for carrot cake for dessert. I found a packet of dried but juicy cranberries at Whole Foods that had no sugar or anything else added that were just the trick for the stuffing.

    A gourd is typically hollow. These are squash.

    Does anyone else look forward to watching Dillon burn his mouth every video?
    Also, I was on Team Reebs with how to cut an acorn squash, but after I saw how gorgeous and flowery it looks the "short way"... I'm reconsidered my life choices.

    Careful not to roast the nuts at too high a degree (thinking of the advice from Dr Greger)--but once they're mixed it it might not matter so much ... I have a lot of recipes that call for nuts (don't we all!) so this is an issue that is frustrating -and- maybe they'll find out it's not a problem?

      Sweet and spicy complement each other. I am a woose when it comes to hot peppers, but if it's offset with something sweet, then I can tolerate the heat. Spicy curry and raisins another great combo - hot and sweet

      Yes, maybe something sweeter like mango . . . but then he did have raisins, so I guess we won't know until we try it. Any of Dillon's recipes I've tried so far have been amazing!

      @@petersister yes, mango is excellent in sweet spicy dishes. One of our favorite dishes is a sweet spicy mango noodle dish. I agree, Dillon’s recipes are awesome. 👍🏻

      I mean, they have to add some flavor in here somewhere. This recipe has no oil, which means no reaction in the food: no caramelization and no Maillard reaction. It is just boiling the food. The only seasoning they do is using fresh herbs, but even then they cook them down in liquid instead of adding them in the last step, so even they lose their freshness. I would 100% not follow this recipe at all, but I do understand the need for some acidity and actual flavor here... Seems silly to me, but I guess this recipe speaks to a few folks.
