- Baking with the Bake Off strikes again!
It's been a year and some change since I took up the technical challenges, and while the past couple of years I have come up short, I am back on it again.
This week is Cake Week and we are making the Malt Loaf.

Here are the amounts converted to cups:
1 strong black tea bag
150ml (1/2 cup) just-boiled water
200g (1 cup) flame raisins (or any raisins really, go wild!)
100g (1/2 cup) soft, pitted prunes, finely chopped
½ tsp bicarbonate of soda
150g (2/3 cup) malt extract, plus extra for glazing
40g (1/3 cup + 2Tbsp) black treacle
100g (1/2 cup, packed) dark muscovado sugar
250g (1 & 3/4 cups) plain flour
1 tsp baking powder
2 eggs, lightly beaten
unsalted butter, to serve (optional)
