      Bella Brooks no it just needs a syrup on it in my opinion if you are USA use corn syrup brushed on top and sides while warm, honestly I just wrap mine in parchment then in a zip loc bag and let it sit a day or two it is just wonderful and moist.

    I'm not too sure if malt extract is available in Australia, but I guess Google will be my friend as usual. 😉
    Edit: Google found it in about 1 second at Australia's leading supermarket! And it *DOESN'T* contain Cod Liver Oil. $AU10 .00 for a 1 kg tin (about £5.16), so it's not all that expensive, either! 😀

    Omg cod liver oil and malt...yes indeed I was a force fed victim in the 1950's, every morning before school, a huge rounded tablespoonful...I swear I can still taste that awful stuff, that and parishers food..liquid iron tonic, Thank Keef for the horror trip down memory lane..but I loved your malt cake video

      I also remember a spoonful every morning before school in the late fifties and early sixties and I absolutely love the stuff even having a spoonful every morning now in winter and I am now 67.So,yes I love it.

    3:17 -- cod liver oil ? ... in a fruit cake?
    It's not bad enough that fruit cake is as dense as concrete (and lasts longer); but to make it taste like rancid fish ... Do you intend to bomb an enemy nation with this cake?

      @@Keefcooks -- LOL I watched a couple of other videos where they made Maltloaf, and the commenters' consensus was that Maltloaf was indeed tasty. I'd be willing to try it, but malt extract is almost unobtainable. It's available only on-line -- and even then, you must buy it in industrial quantities. :(

    Oh, Keef!
    I am so much fatter than I was before lockdown started and NOW you've not only put maltloaf in my brain, but you've given me the means to make it.
    If they have to lift by body out of the house with a crane, I'm leaving a note blaming you!
    I think Mrs. KC liked that.
    Just as an aside, I live near Castleford and when the maltings are in full flow, the gorgeous aroma can be smelled for miles around.

      It is one of the most yummiest loaf ever, tastes better the next day or after. The popular brand Soreen is really nice but I prefer baking my own cos I like baking, lol.

    Malt extract is available from any home brew shop. Maybe Boots still stock it. Some chemists may have it. Another place to look is either in the ice cream topping section or the baby section in the local supermarket.

    Avoid soreen at all costs. Make your own. Soreen had high fructose corn syrup. And that’s a no no

    Made 2 days ago, tried one slice, very nice. Left for 2 days its FABULOUS! My Kiwi husband was really impressed. I'm over the moon, the sticky moist texture is as I remembered as a child, many moons ago! So so comforting with a cuppa! Thank you will definitely make again soon.

    The recipe has similar ingredients to the Christmas cake I make, except the cake is made with brown sugar and stout rather than molasses and malt extract. The cake takes 90-100 minutes in the oven, which is probably why the malt loaf required more time than you initially expected. Like your malt loaf, it never comes out as dark as I would expect. Anyway, I have ingredients left over from Christmas so I think I will see if I can get some malt extract to use. If it ends up tasting not entirely different I might try it with stout instead, since that is much easier to obtain.
    I've not had malt loaf for 30 years, but I still remember what it tastes like.
    Edit: I guess malt extract is used to make all sorts of things, in the US at least. I found it on Amazon, without cod liver oil. It's not cheap, but neither is Guiness.

    Mine usually is not as wet when I make it and I use prunes and dates. I'm sure from the happy dances and glee it's a winner and the glazing with syrup while it's warm is the key to the sticky moist. I wonder if you could soak the fruit in a malt beer I might try that as well as a bit off malt powder 👍💕

    Initially, I thought the title said "meatloaf", and I thought "Keef is doing another meatloaf vid. I hope he sticks it to the haters and crazy critics" That said, I still hope he sticks it to the haters and crazy critics with this vid too.
    Editing to add. I wonder if this is similar to the Jamaican spice bun I buy in my local international grocery store? It's very dense, studded with raisins, and has allspice and cinnamon in it.

      No one replied? Still wondering 5 months later? Nothing like Jamaican ginger cake. Malt loaf tastes like sweetened stewed black tea. You do need butter on it.

    I’ve never had malt loaf before - Soreen or otherwise - but I had some malt extract that needed using (how did we end up with two tins of something we only use every couple of years?) but gave it a go today and WHOA. So delicious. I have no idea how we’re supposed to leave it to mature - delayed gratification is a bit of an issue when the instant gratification is so good! Anyway: thanks for this recipe, it’s fab.

    The inside the Factory series visited the Soreen factory, a couple of years ago. One thing that came out, was that the cooking process hadn't finished when they left the factory and it took a couple more days before they were edible.

    that looks wonderful - far better than the commercial one - I used to buy one made in London that was not so heavily cooked ( burnt ) as Soreen but for the last 10 years I can only buy Soreen - maybe because it is Local to me in Manchester

    Your malt loaf looks delicious so it is on my ‘must make’ list. Malt extract without cod liver oil is available at Holland & Barret as well as a number of supermarkets for vegetarians, vegans and for those who have fish intolerance.

    Thanks for this recipe - I made it yesterday but had to use syrup instead of treacle. It's so easy to make and a million times nicer than Soreen. And every slice is double the size of a Soreen one, so it's a winner. I winced at the price of the malt extract but it's worth it. Going to make it again at the weekend!

      I didn't chop the top off, I turned it upside down. We don't normally keep butter in the fridge - must have been a cold day.

      I agree but there is something about the flavour of the tea that makes the fruit taste yum from the tannin in it I was wondering about stout ale or a malted beer it might work too 🙋

    My mother used to make this & like Keef I recall it being very black. Not sure I can get malt extract where I live, I'll ask at my baking suppliers when I try and buy some flour next week. Seems from the recipe it is similar Tea Loaf which I was going to have a crack at when I've finished the last of the huge bread puddings I made myself .

    My local chemist sells extract of malt. They have it with or without cod liver oil. I personally prefer without cod liver oil. My mother used to give us a dessert spoonful of malt before going to school in the winter. I loved it and buy a jar a couple of times a year.

      Your recipe states 125 ml of tea but in the video you make a large mug (250ml) and pour it all in. Is that why your batter was runny, and took much longer to bake than you anticipated ?

    Yay! I fell in love with this when I was in England. Now I can try to bake it at home! I might try it with just raisins, to possibly eliminate the necessity of the added spoon in the mixer. I assume that was to help break up the fruit pieces so they wouldn't all stick together as they go around the mixing bowl? You do come up with some unique processes! In all seriousness though, I DID think you used a technique I haven't seen before with cutting the parchment and crumpling it the way you did. Of course that may be a commonly known standard technique just like the spoon in the mixer trick and recipes that call for a baking time of 40 minutes plus 10-20 minutes plus 20 minutes, and that old chestnut of a prank offering one's spouse a taste of meatloaf that's been spread with generous slabs of butter, but it's the first time I've seen that clever parchment pattern). Anyway, Doreen would be proud.

    I was a baker for 12 years, and we made malt bread like Soreen which was a proper malted dough with yeast and fruit in it.

    Malt Loaf is my favourite - whatever, as you say with a spread of butter. I only buy it occasionally cos I have firm resistance. Malt Extract is available as treacly stuff called Liquid Malt Extract as opposed to `Dried malt Extract DME dose not matter you are not brewing with it.
    For some reason I had a can of the Dark Treacle, I may still have it but it will be 20 years out of date so I need to find some (surely that is still on a shelf)(unless there is a sudden demand because of this video :_). Then this will definitely be attempted. A kilo of LME should be enough for three or four loafs and as they normally come a bit bigger than that ????
    My Sister used to make Christmas cakes which involved soaking fruit things for months. Maybe a time investment is needed here??

    I really enjoyed your video :) I moved to Finland in January and I really miss the good old British foods, like maltloaf. The recipe looks great! Will definitely be making it :) Also, another reason why I enjoyed your video so much was the end part (2 days later) when you're chatting, eating the maltloaf and having a cuppa. Reminds me of being at home

      It is delicious, I bake it all the time - a British and Irish tea time fave. You should be able to get Malt from a health shop or supermarket, depending on where you live.

    The malt loaf looks lovely!!!
    My mum used to make it donkeys years ago and I’m sure it had ‘all bran’ in it.?
    Re the colour, I’m sure you could darken it with gravy browning. I bet the manufacturers do that as well.

      @@barlow2976 it wouldn’t ruin it. You also use it as a colouring in Xmas/ wedding cake. Gravy browning is tasteless.

      @@jackieblakemore56 Yes, my mother a professional baker, gravy browning was used in christmas and wedding cakes also christmas puddings, no taste just gave it that richer darker colour. can be used in anything you want but as you say adjust any salt needed. Just make surer it's the proper stuff and not oooh oo Bisto.

      Hi malt extract vegetarian/vegan will not have cod liver oil in. Lots of supermarkets and Health stores in UK. and Amazon sells this product.
