I’m using the Schar product for the first time today (pigs in a blanket!) and now know how to approach / what to expect. Btw - a Reddit user suggested balling up the dough after thawed and re-rolling to shape as needed, especially if having trouble with cracking.

You can’t really compare gluten puff pastry to gluten Pepperidge farm is going to be better but unfortunately those of us withCeliac disease are lucky to have the Schar brand.
the gluten free won't puff a lot because there's no "Gluten". just the nature of the product. I honestly don't think it's fair to compare GF vs regular. Regular will win every time. But if you can't eat the regular, you settle for what you can get.
@@LaniAnne402 I agree with you, However, comparing gluten free version to regular and saying GF doesn't puff is accurate, and you can't expect it to puff when there's no gluten which give it the stretch. Personally, I'm gluten intolerant so I live gluten free. This is a great product - the Schar brand. It took a long time to get this developed and personally I'm glad to have it. It is not fair to compare it to regular gluten version

perfect Kevin! first you've given me an idea, i give each of my neighbors Christmas little goodies in Winter, 2nd, i have 3 neighbors i give to, and 3rd/ my granddaughter has to have gluten free foods, so i will be mailing them to her, she is in College!
Hi Kevin, I was wondering if the longer thaw time on the gluten-free pastry may have made it soggy...just a thought. And fyi many puff pastries are vegan including Pepperidge Farm...surprising when you think of homemade puff pastry
We buy Simple Mills gluten-free baking products. I don't know why, since we have no gluten problems. I make pizza with their pizza dough. It comes out thin and doesn't crumble.
Honestly, compared to other GF brands, Schar looks awesome. I see actual puff and some layers. The other brands are really just pie crust - zero puff, zero layers. A real comparison would be GF to GF. Apples to Apples.
I wonder if baking the schar pasty longer would result in it being less soggy? I know gf baked goods tend to take longer. Has anyone else tried with success?

When you’re allergic to wheat, you’re happy to have anything close to regular puff pastry.

If you don’t need to be gluten free it would be kind to not buy the gf products during the Pandemic many had a hard time getting gf products
