Anther update: I made your updated version of puffed pastry but this this I made cheese danish with the dough. They were sooo good. I made 2 recipes so I am going to make “baked Monte Crisco” sandwiches with the other dough OR perhaps Crouque - Monsieur. The possibilities are endless. Thank you again for the recipe!!

I have made several of your recipes so far and I am amazed how well they turned out. I made your puff pastry recipe and decided to make Strawberry Napoleon’s since strawberries were in season. I used pastry cream, topped with strawberries for each layer. Then, I put the classic white glaze with a chocolate pattern on top of 3 layers high. They were so crisp, crunchy and DELICIOUS, just like the “regular flour” Napoleons that I remember. They held up well in a container in the fridge for several days too. They didn’t get soggy. Oh my gosh! Thank you so much!!!! What's crazy is that I JUST this past weekend made a napoleon with my puff pastry and am hoping to post it soon! I didn't add strawberries, but did all the other classic napoleon stuff (the white glaze and chocolate pattern and lightened pastry cream). Napoleons were one of my favorite pastries from years ago and they were also a personal goal of MINE!! I guess great minds think alike 🥰🥰🥰🥰🥰

I made the bread flour mix using sprouted brown rice protein powder, because I can't have dairy.. It does work, but the flavor is really strong, like the smell of a really old cardboard box. Even so, at least the texture is good.
I use chickpea flour. Even though it also smells and tastes like hell when it's raw, it works perfectly for her bread flour mix, and after it's cooked, the taste goes away and leaves you with a little bit of a bready taste! Been using it for years :) it's cheap and super useful in gluten free baking

Glutinous is different so don't use that. If all you can find is regular white rice flour, if you can process it in a food processor to grind it up a little finer, you'll have better results.
You can make tons of things with the other half of the dough (I have lots of ideas listed in the blog post where the recipe resides)! Pain au chocolat is usually made with yeast dough (croissant dough), but you can definitely stuff this dough with chocolate 😋

I'm not sure, but if you have a food processor or powerful blender, you should be able to put that through one of those and get a more superfine texture.

This would be good, but the ingredients are hard to gain in Australia. Instead of linking your own brands etc you can get, can you just write the ingredients as they would be named. Having trouble with the Whey stuff. Everyone things I am a muppet talking about curd's and Whey.
The ingredients are written as they would be named, such as whey protein isolate. That's the name of it, not the name of the brand.
