Pumpkin Muffins
1 cup pumpkin puree (not pumpkin pie filling)
1 cup flour
1/2 cup coconut sugar (can swap regular sugar)
1/3 cup melted coconut oil
2 eggs
1 tsp vanilla
1 tbsp pumpkin pie spice
1 tbsp cinnamon
1 tsp salt
1/4 each of baking powder and baking soda
1/2 cup white chocolate chips (optional)
Mix all ingredients to combine and divide into mini muffin tin (I prefer the minis) or regular muffin tin and bake 350 for 20-25 minutes or until a toothpick can be inserted and removed clean.
Granola Bars
1 cup rolled oats
1/2 cup melted coconut oil
1/2 cup honey
1/2 cup dark chocolate chips
1/3 cup hemp hearts
1/3 cup chia seeds
1/3 cup ground flax
1 tsp salt
- [ ] Mix everything until all ingredients are completely coated
- [ ] Press everything into a 9x11 pan lined with parchment (press firmly and pack it as tightly and evenly as possible)
- [ ] Refrigerate at least 2 hours, overnight is best
- [ ] Cut into desired shape and store in an airtight container in the fridge
