Blend 2 cups cottage cheese until smooth and mix with taco seasoning (I used about 5 tablespoons). Layer this in the bottom of your serving dish Add 1/2 can of rinsed black beans and top with about 1 cup of shredded cheese (I used Tex Mex) Add pico de gallo on top. You could definitely half this recipe OR freeze the remainder and reheat for a quick weeknight in the go meal! 2lbs ground beef 1/3 breadcrumbs 2 tbsp garlic powder 2 tbsp onion powder 2 tbsp yellow mustard 2 tbsp Worcestershire sauce Salty and pepper Mix ingredients just until combined and divide evenly into 12 greased muffin cups. The easiest snack cracker recipe EVER! Feel good about feeding your kids healthy snacks that they will actually love! 100g sourdough starter 1 cup flour 1 whole avocado You can sub the sourdough starter for water if you don’t have sourdough, just add slowly and stop when the dough just comes together. You do not want the dough to be wet or sticky Mix all ingredients together until a dough forms and be sure to get all the lumps out Knead by hand until smooth. Add salt and any other seasonings you like! Oregano or Italian seasonings would be great in these crackers! Roll out on a floured surface as thin as possible (about 1/8th of an inch) You can use a cookie cutter or cut into squares by hand using a sharp knife (cutting by hand will save you a lot of time!) Bake in a preheated 350 oven for about 13-15 minutes or until slightly golden If cutting the crackers by hand this whole process (not including bake time) only took about 10 minutes!!! Creamy Chicken and Veggie Bake I used 5 chicken breasts and that fed 9 people with leftovers. You can adjust the amount based on the number of people you are feeding. For a family of 4-5, I would recommend using 3 breasts. If using 3 breasts, I would use 1/2 of the remaining ingredients (ie. 1/2 carton of stock and 1/2 brick of cream cheese, 1/2 bag of vegetables) 3-5 chicken breasts 1 carton chicken stock 1 4oz block cream cheese 1 bag frozen mixed vegetables 3-4 tbsps flour - slice chicken breasts lengthwise into thirds, so each breast should yield 3 pieces of chicken - Tenderize chicken slices with a meat tenderizer (this step is optional but I find it helps make the pieces a bit bigger and lay flatter in the pan) - Season your chicken WELL, I used salt, pepper, garlic powder, onion powder, old bay seasoning and poultry seasoning. You can use whichever seasoning you and your family enjoy) - Season a few tbsps of flour with the same seasonings and dredge chicken in flour - Pan fry until golden on low-medium heat and place in a large baking dish u til all the chicken has been pan fried - Using the same pan, use 2-3 tbsps of flour directly in the pan and let cook for 2-3 minutes until all the bits in the pan have been absorbed, then add your chicken stock and cream cheese and simmer on medium heat until thick and creamy - Place the frozen vegetables directly on top of the cooked chicken breast then cover with the sauce - Cover with foil and bake at 350 for 30 minutes - Let stand for 10 minutes before serving over rice or potatoes ENJOY! #budgetmeals #budgetfriendly #budgetmealideas #mealsonabudget #feedingacrowd #bigfamily #bigfamilylife #bigfamilies #dinnerideas #dinnerrecipes #dinner #dinneronabudget #relatablemom #momofboys #relatable #momlife #boymom #toddlermom #momsofinstagram #mealprep #feedingteens #teenageboys #mealprepideas
