I know that some of our food is not good because when they cook it in the US they are not authentic anymore for example Sisig the authentic and the best sisig is without mayo and egg we call it here Sisig Kapampangan hope that you taste that too in the coming review. Not even all filipinos eat pig face, ears let alone pig's brains, which was what the mayonnaise or eggs are replacing. Foods shouldn't always be authentics because should tweak and change the recipe to to suit what's available in their area or their taste.

Now, they've failed to keep up with competition - old owners stuck in their ways as far as the "tsismis" goes in the local Filipino community. Only thing worth ordering here is the whole suckling pig (lechon) and even that is overpriced compared to competition.
That BBQ will work really well using vinegar with chopped shallots and chilli pepper, and add in a little sugar and its heaven, plus that garlic rice 👌 (for me)
Try to find a place in your area that serves Authentic Kampampangan Dishes. Because the original version of sisig that was created in Angeles City, Pampanga doesn’t have any mayo and egg. The main ingredient of sisig are mostly part of the pig’s head like ears, cheeks and other parts of the head, chicken liver too and red chili, red or white onions. And you should ask for toyomansi! Hehehe
That lechon kawali looks overcooked as heck! Being filipino, we don't eat out to Filipino restaurants often, but when we do Lechon Kawali is one of my must orders. Plus Kare Kare! ...and in our culture, it's okay to eat with your hands! 😉

I think the garlic fried rice is home made style. The lack of crunch in the sisig might be the lack of pig ears. They did not scrimp on bird's eye chili though. Very hard to find over there.
We also usually dip our barbecue in vinegar that is steeped with the chilies you found in the sisig. The bite should be barbecue dipped in spicy vinegar and rice, so good 🤤

That's always the dilemma with Filipino food - there are differences in price, portion sizes, quality, item availability, distance, etc. Honestly my family would go to 3 different places just to pick up certain items that they do well. With that being said, I'd probably order the same things you got and be relatively happy with them. Obviously not terrible, but you still made it look pretty damn good. Cheers and happy holidays!

I only go there for the regular lechon (not lechon kawali), and they only sell it by the pound early on the weekends. If not, you'd have to order the whole pig. Pretty sure that's their signature item. Prb the only place that I know that you can get lechon by the pound in the area tho.

yeah I don't think thats Mang tomas it looks lighter imo, also the first one from that good lechon Kawali might not be mang tomas as well it might be their own recipe since it didn't look like it for me either. best thing would be to just ask them, also if they have it you could try asking for the spicy Mang tomas which is amazing! or buy one for yourself and try it out!

The last piece from the first BBQ stick was chewy because here in the Philippines it's common to put the fatty part on the end of each BBQ stick.
