1/4 cup honey
1/4 cup brown sugar
1/4 cup fruit juice, beer, or broth
Sauce:
2 tbsps butter

What I didn’t see is did you add the beer with the ribs once you took it out the oven for the 2nd cook? Wouldn’t it spill in the foil?

I was thinking the same thing :)
He would have poured about 1/4 cup of it or so in the foil packet. Red wine, chicken broth, pineapple juice work great for me. Popping them back in at 325 uncovered is to caramelize the sauce. Around 20 min. I like to sauce them 1 more time on top and do the last 2-3 minutes under the broiler on hi watching it like a hawk until it's just perfect. OCD
Watch it like a hawk is such good advice but needs to be said to a lot of people. It's basically 1. Cook it dry 2. Cook it wet 3. Caramelize the coat.

When do you use the beer? I watched the whole video twice and I don't see the beer being used.

These look amazing!!! I'm definitely going to try this. I am hesitant to cook with chipotle because it has such a strong flavor.
I’ve learned by my mistakes to use less than what they say. I do love spicy foods but chipotle peppers is difficult for me to get it right. So start out slow. When I follow a recipe that calls for 4 chipotles I will use one chopped up and some of the sauce or just use the sauce alone. Good luck.

Where do you put the fruit juice, beer, stock. Do you put it in the bottom of the baking sheet to use as a liquid first demon or do you spray the ribs with it?

Guys as an FYI, don’t use pre bought BBQ sauce to coat the sauce at the end, make it your own, makes a huge difference! I made this recipe once and was lowkey disappointed but I also didn’t make the BBQ sauce myself but this time I did and let me tell you, I was just sucking off the bones wanting more, so good!
