I would kill to see a behind the scenes of how The Seatbelts were formed and the process the went through to make the music for the show. Yoko Kanno is a mad genius.
Its a real one of a kind treat, you can call it an adventure of sorts, although it does get quite unconventional. High production values. Its all about the journey and the people you meet along the way! I'd also like to add that movie buffs and cinephiles get even more out of it, as its filled with references left and right. That little whimper at the end mirrors him taking a calculated injury at the end of the chase to ultimately get the outcome he desires.

The crowd roaring over the amazing sights and spectacles happening in the big ring, the trombone sounds like an elephant tooting, and later like a little motorized vehicle being driven around, maybe by clowns or stunt drivers. It's just a bombastic experience of events and sounds in the best way possible!

For some really wild jazz I recommend Gundam Thunderbolt. Naruyoshi Kikuchi did the jazz for that & he played the saxophone for Cowboy Bebop. There's a "How Gundam Thunderbolt turns Music into a Weapon" video which gives context for how it incorporates music into the story which is really interesting.

It's an episode (I think the second episode of the series), in which the bounty hunters of the series try to catch a dangerous thieft who stole an important experiment, who happens to be a very, very smart dog. In the particular scene, the dog escapes from a pet shop, and suddenly we have the scientists behind the project, the thief, the two bounty hunters, and the police chasing the dog through the streets, while chaos breaks out and more dogs appear, ending in a chase between dogs and humans. That's why the trumpets and saxophone at the beginning are so chaotic and out of tune on purpose, as if imitating the howling of the dogs in that total chaos.
Yoko kanno composed so many TV commercial music in Japan. That makes every short part of her song so attractive. You can listen Japanese TV commercial song her composed "CM yoko" in youtube.
Cowboy Bebop is a timeless masterpiece. It’s my second fav anime, slightly behind aot and above death note. It’s unique music, unique storytelling (more like a Western art film than a regular anime) and 10/10 aesthetics makes it such a joy to watch. Musically speaking there are many great soundtracks, among them I would recommend Space Lion. Hope you will react to the anime!
