    Peranakan Food is rich in flavors and beautiful in presentation! It is one of the most diverse and distinctive of all local cuisines. It's a fusion of Chinese, Malay and Indonesian food. And it's absolutely DELICIOUS! Must-try when in Singapore! Baba refers to a Peranakan male. Nyonya for Peranakan female. These foods are also referred to as Baba Nyonya Cuisine.

    Rough translation of the malay song:
    *Banyaklah campuran ada di dalam nasi ini--*
    There are many ingredients/components in this rice dish (the nasi ulam dish) -
    *sayur sama ikan, sama daun-daun yang wangi.*
    vegetables, fish and aromatic leaves.
    *Makan sedap rasa badan nak mampu jadi segar,*
    Eating the dish, you feel that it is delicious and that it makes you healthy,
    *Tapi baik mau jaga, Neo lalu pun nanti tak sedar.*
    But it is good to be careful (do not be too engrossed with eating), because your mother-in-law may pass you by and you may not take notice of her (manners is very important in the peranakan family and it is not a good thing to not acknowledge one's elders).

      @Jacky Phantom Not really. Malay is an ethnic group. Indonesia is a nationality. Anyone can be Indonesian if they go through the Indonesian immigration process. Becoming Malay may take several generations of acculturation and assimilation, unachievable in a single lifetime.

    Beef rendang, deserves it's own video. The list of ingredients, the cooking time, and rendering down of the sauce to an intense thick 'gravy', it's an amazing dish. It has regularly been voted as the number one dish in the world. If I could, I'd eat it every day.

    peranakan food looks like a lot, confusing at times but don’t be intimidated. It is really a good blend of spices that gives the just nice amount of flavour, in short its aromatic food.

      @Jack Jacky ​ In regards to Indonesia, Peranakan Chinese can be referred to as Peranakan, Kiauseng, Babah, and other terms depending on the region.
      For Peranakan fashion you can search Kebaya Encim and Batik Lasem/Batik Tionghoa. Encim is how the Peranakan Chinese here call their aunties. And Lasem is a town on Java's northern coast that has had Chinese settlement since the Ming dynasty. In fact, you can book an Airbnb at the Oei's estate in Lasem.
      For historical, you can search admiral Cheng Hoo's voyages to Indonesia. Including Palembang, Banten/Tangerang, Surabaya, and other places. Or how Chinese pirates like Liang Daoming became king of Palembang at some point. There's also the Lanfang Republic, a Chinese company and pseudo country that was located in West Kalimantan during the 1700s-1800s.
      For culinary, you can search Soto Betawi/Coto Makassar, Pempek Palembang, Laksa Banjar/Laksa Bogor, Lontong Cap Go Me, Kue Ku, Kue Keranjang, and many others.
      For linguistic, you can refer to the dialect of Javanese spoken by Chinese in Surabaya called Bahasa Pasar Atom. The diction and pronunciation are distinct from other Javanese Surabayan speakers.
      For traditions, you can search Pernikahan Ciotau and Festival Cioko.
      For peoples and families, you can refer to the Kapitan Cina system, the Kwee Family of Ciledug, Khouw Family of Tamboen, other Baba Bangsawan families, Chriseye, or Djiaw Kie Siong.
      For organisations, you can refer to PERTIWI (Peranakan Tionghoa Warga Indonesia), Benteng Heritage Museum, Museum Pustaka Peranakan Tionghoa.

    Tripe satay is very much a street food which was then brought into the restaurant. In fact, this is about the only restaurant I know of which serves tripe satay. If you are looking for this at the hawker centre, you will need to look for a Malay satay stall. I have not seen any Chinese satay sellers selling this. In Malay, it is called babat. This may or may not be listed on the menu and you may have to ask for it. One of my favourites.

    pandan leaves are such a great plant that my family can grow even though we’re typical singaporeans living in a HDB flat! i guess living in a corner unit helps as we have more corridor space

    This food looks amazing! Although I'm not sold on the tripe lol. My Mum adores tripe, here in the UK she eats it with loads of vinegar & white pepper, which is how she was brought up eating it.

    Sorry, you got some of the info wrong.
    1) It is nasi ulam, not nasi goreng. Ulam means salad. Also you said the colouring of the rice is not due to stir frying but due to the sambal added - this is also wrong. You need to actually stir-fry the rice in the sambal or as we call it in this case, rempah, before you can get this colour. The veggies however, are normally just added at the last minute, as you have explained.
    2) You said that the nut had to go through processing before it could be what it was in the dish. The uncooked nut or buah keluak that you were holding is actually already in its final 'processed' form. All that was needed to be done was to cook it. Of course, you will have to cut a hole in the shell, dig out the contents, mash the contents and put it back in the nut, because it is impossible to eat it nicely without mashing the black stuff within the nut.
    3) The fried cups you were eating with the prawn (you call it shrimp in America) on top are kueh pie tee, a nyonya dish and is only available at certain places in Singapore. Generally, peranakan food is home-cooked food. We're lucky nowadays to have peranakan restaurants.
    Some final points:
    1) For all those who are new to Asian cuisine, the bones are very important in Asian cooking. Unless the dish calls for filleted meat, it is unacceptable to use fillets in Asian cuisine. The bones impart a gorgeous flavour to the dish that you can't get without the bones. Also, if the fish is deep fried or pan fried, you would get some areas of the fish that are really crispy such that the bones would be edible - same for other seafood such as unshelled prawns.
    2) Pork, particularly pork belly, is the best meat for satay, though mutton is awesome too. The springy texture of the meat together with the moistness of the fat provides the perfect conduit for the dish satay. Glad that the restaurants you went to had pork for satay, something you obviously won't find in Malay (muslim) eateries.
    I am so happy you appreciated the food. Most people who are not familiar with such tastes might find it unpalatable.

      wow. im of peranakan heritage too but ive learnt alot from ur comment. (my dad's side is peranakan and i dont get to eat homecooked food from that side of the family). i get my peranakan fix at violet oon at bukit timah (clarke quay's too ex). In the past Jackie's Bowl near St Pat's had gd P. food too.

      @@keffinsg Nope, I'm Malaysian chinese. Honestly i was never being treated as second class citizen in Malaysia. Since i live in southern part of Malaysia, which is johor bahru, i got the chance to taste foods from both countries. Without bias, Malaysia's foods taste much better.       S'pore also had Peranakans in the early days. Although some came from Malacca ,that doesn't mean all Peranakan food originated in Malacca because Peranakans had always come out with new dishes over a long period of time. I am sure some of the Peranakan food we hv today didn't exist in the 19th century or earlier. I had eaten at a Peranakan restaurant (亲切) in Malacca,it was not as tasty as what I hv in S'pore - maybe I went to the wrong restaurant.

    My suggestion is you put the name of the food in text because the way you said “sambal” was sound like “samba” which is a totally different meaning. Also when you said “randan” i believe you meant “rendang”. Sometimes pronunciation, especially foreign naming, can leads to misunderstanding

    Nope, not the 19th century. The Chinese that immigrated during the 19th century Qing Dynasty became the ancestors of the modern day Malay archipelago overseas Chinese such as Indonesian-Chinese, Malaysian-Chinese, Singaporean-Chinese, and Southern Thai-Chinese. The Peranakan are descended from a much earlier arrival dating back to the Ming Dynasty during the 15th and 17th centuries. Although Chinese settlement can be traced back all the way to 10th century - the Chinese from this earliest era have completely assimilated into the Malay populace. The Ming Dynasty settlers were primarily Han Chinese men from Southern Fujian province commonly known as Hokkien or Hoklo (the same group that make up the majority of Chinese in the Philippines and Taiwan today). These men married Malay women as Chinese women were very rare. They adopted Nusantara
    customs which they fused with their own Chinese cultures which generated a distinct fashion, architecture, cuisine, and even pidgin language known as Baba Malay.
