10:58 the other crispy noodle TJ mentioned is call "Yee Mee". hot egg sauce with veg,meat&seafood is poured onto the dry crispy noodles. you then mix the concoction a little but not too much then eat it quick as the crispyness disappears pretty quickly. the trick is probably reserve a little of the dry crispy noodles to one side if you can then put them on top of the sauce drenched portion so you still get a little of the crispy bits.
"kung fu chau wak tan hor fun" (basically "egg-sauce fried rice noodles") uses the same sauce but with flat rice noodle strips instead. the best version pre-fries the rice noodles alone till slightly brown, burnt and crispy. any place that does "yee mee" can usually do the rice noodles version too. just specifically ask for the rice noodles to be fried extra crispy. i like it quite peppery as well.

Singaporean here. I'll eat the Chao Ta Bee Hoon and the Pork organ Mee Sua soup at this eatery when I'm around the Kembangan area. Have to say the Chao Ta bee hoon which was created by JB Ah Meng which operates at Geylang, is something really special and the 'wok hei' is good. It's supposed to be crispy on one side which they slowly pan fry the noodles till it's dry and crispy but soft on the inside. Super expensive at $10. The Mee Sua is good too and it's soup stock is concentrated with herbal flavours. The prices at this eatery is not exactly cheap though.

Looks like all the noodle dishes were good. I love noodles but not sure about the organs in the soup I am not big on them but I am sure the broth would be great. BTW how can I get a Cup of TJ haha. Keep up the good work TJ
Mee sua is a very Hokkien (fujian) thing. It's a very flour-ish sort of noodle which can be quite cloying texturally, but it is comfort food for many. It's good with soup with pork and garlic.
