I just made walnut milk a few days ago -- and after a day or so in the fridge it got REALLY thick. What a surprise! I even wondered if something went wrong. I had added a very small amount of guar gum, but not anywhere enough to explain how thick it got. I had also added about 1 TBL of honey and 1 tsp of vanilla extract. (I had not soaked the walnuts -- but have a high-speed blender, and I removed the fiber through a nutmilk bag like the one in the video.) I had made the "milk" with about 3 cups of water and close to 1 cup of walnut pieces. Am glad to see this video. Now I won't worry so much about consuming this.

It would have never crossed my mind to make walnut milk, and those are the most affordable nuts around here, just short of peanuts. Next time I buy a bulk bag of walnuts, this recipe will be the first on my to-do list.
Walnut milk is probably one of my favorite milks... especially when I add some Celtic sea salt and a little sweetener. I love it. I wish walnuts were as cheap in my area, but it's okay, I know a guy who knows a guy. Lol.

The last few years I have been buying almond milk because I like raw oats cranberries and milk. But from a child absolutely dislike cows milk. Yuck! So I am going to try this recipe. The pulp I can use in a fruit cake. I live in Greece. A litre of almond milk without added sugar costs 2.25 euro a litre. Almonds and walnuts 8 euro a kilo.

Hey Harvz, I kept mine in an airtight bottle for a week in a very cold fridge and it still tasted fresh. Just give it a good shake before using and you should be good.

I am curious..but first thanks for such a well made video and tutorial..my question is that I make walnut make as well just as a instant ready to dring single serving for myself. I just grab a finger full of walnuts from the bag and place them into my blender with purified water. I add vanilla and truvia and an olive, coconut, sesame seed oil mixture to my blender as well. I blend twice and serve. I have little to no pulp to strain so I can drink it straight as is. I mainly drink it solo or add it to my coffee or make hot chocolate with it. My question is that, do you really need to soak it and do you end up having to strain it because of the amount of walnuts you use? Thanks!
You need to soak it to get rid of excess phytic acid which is present in most nuts, seeds, and legumes. Phytic acid blocks or greatly reduces nutrient absorption. Even though it's considered an antioxidant, most animals and human beings aren't able to fully digest it. I'm not a nutritionist, but that's the little I know about the subject. Soaking your nuts also makes it easier to blend. Not everyone's fortunate enough to be able to afford high powered blenders, so I always have to keep that in mind when creating a tutorial like this one.
Yes I do. I always push that faucet (filtered water) to the side, so I can get a better shot with the larger faucet. All foods are rinsed later using filtered water. My filtered water faucet is too boring 😴 for video shots.
I usually consume mine within 3 to 5 days. Some people say it could last longer, but I haven't tried it. Keep it refrigerated and in an air tight container.

Walnut milk will pair really well. Heating it up gives it a slight hint of bitterness. It's undetectable if you're not looking for it.
