Delicious Tortilla Wraps with Fresh Tomato Salsa

  • The wonderful Tortilla wraps are always a hit, but having them baked and topped with Salsa, there's no better way to enjoy them. Warm, cold, fresh or reheated. They are always a treat.

    📜This recipe will make 4 tortilla wraps.
    🔹 Ingredients: 🔹
    - 4 medium sized tortillas
    - 400g / 0,8 lbs chicken breast
    - 1 carrot
    - 1 medium sized onion
    - 1 can of corn
    - 150g / 0,3 lbs cheese (Edamer or similar)
    - ½ green pepper
    Chicken marinade:
    - 1 tbsp olive oil
    - 1 tsp salt
    - ½ tsp black pepper
    - 1 tsp sweet paprika
    - pinch of turmeric
    - pinch of cayenne
    - pinch of chilly flakes
    - generous pinch of MSG (optional)
    Tomato salsa sauce:
    - 10 -15 cherry tomatoes
    - 1 tbsp olive oil
    - 1 tbsp brown sugar
    - 2 tbsp balsamic vinegar
    - 1 tsp chopped parsley
    🔹 Preparation: 🔹
    1. Cut chicken breast into bite size cubes and season it with the chicken chicken marinade.
    2. Peel and cut the vegetables into small cubes. Cut up the cherry tomatoes and set them aside
    3. Grate the cheese.
    4. Heat up a large pan and add in 1 tbsp of olive oil. Add in the onion cubes and sauté them until translucent. To it add your chicken cubes and fry them off for about 5-10 minutes.
    5. Add in your carrot and corn and mix everything well. Fry everything off for additional 5 minutes.
    6. On a clean work surface put your tortillas and add 2 large spoons of filling at the bottom part. Add in your green pepper (or other vegetables you prepared), cover everything with cheese and wrap up.
    7. Place the wraps seem side down into a backing sheet or a pan, lined with parchment paper. Cover them with sour cream and cheese.
    8. Preheat the oven to 180°C. Once heated up put the wraps into the oven for 10-15 minutes.
    9. Heat up a sauce pan on medium heat and to it add 1 tbsp of olive oil. To it add 1 tbsp of brown sugar and let it slowly melt. Once melted add in your diced tomatoes.
    10. Keep mixing until the water evaporates. The melted sugar will clump up a bit, due to tomatoes being colder than the sugar, but just keep mixing and it will dissolve back. To the sauce add in 2 tbsp of balsamic vinegar. And keep mixing. Add in 1 tsp of chopped parsley. If you want to make it spicy you can add in a few dashes of tabasco. Reduce the sauce by half. Set it aside for now.
    11. Place one of the wraps on a plate, spoon over sour cream and the salsa we prepared and serve.

    Tips:
    You can leave the wrap to cool and store them in the fridge for up to 2 days. You can eat them as a snack the next day or lunch.

      They were! And we had them for next days lunch as well. But note for me for next time. More cheese!
