Also a little info if it is lenten season or you want a little protein in your meal, saute' some shrimp, i found the P&D 26-30 size works best, saute' the shrimp in a little bit of olive oil and butter, about 1 minute each side, you do not want them cooked all the way through as they are going to be baked in the oven inside the cannelloni, when filling the cannelloni(do not put shrimp in piping/pastry bag) place a shrimp in the middle of the shell, pipe in some filling, place another in, and fill one end, do the same to the other end so you have 3 shrimp per shell. If the shrimp seem to large , you can cut them in half, no tails, and bake as per Joel's recipe, they are delicous.
This is a good recipe, but it's much better to use a tomato sauce made with tomatoes, basil olive oil and a whole clove of garlic, cooked 10-15 minutes in a pan.It's tastier, believe me!! Carla from Genoa-Italy

Great recipe.....similar to the one we do except we use home made spaghetti sauce rather than pasatta sauce. For people who don't believe they have the time to cook....my wife and me always make dishes with a minimum of 4 servings that way we only cook a fresh supper every 2nd evening. Regards + HH Bill
I cook the passata before using it on this dish. Gently heat a clove of peeled garlic in some olive oil, then add the oregano, then the passata. Cook on a low simmer for about 15 minutes. I prefer Mutti passata to the Renmano.

Hmm!!! Mine came out fantastic! The only thing different I did was add Seafood Sauce 1 small jar to my Passata sauce to give it a bit more tangy taste. It is amazing. Thanks for showing this recipe.
If you are in a hurry substitute pasta shells for the cannelloni, it is just as good. And please try and make your own tomato sauce: pan, olive oil, garlic, salt, pepper, oregano, tinned or crushed tomatoes and simmer for about 5 minutes. It really is worth it.

I did this with this sauce and also a pink sauce (with pesto) and I preferred the pink sauce It had mushroom and chicken 10/10 I think I’ll as a some sour cream to the ricotta though next time
I don't have the first kind of cheese that you put inside I know parmesan cheese put the first kind I don't know it can you describe the texture of it so I can buy a cheese similar to it?

Can I ask why you boil the pasta for 4 minutes (I notice you did that with the Beef Ragu recipe). I didn't think you needed to do that any more.
Depends on the variety of pasta. Some are no boil.

I saw the filling ooze out after it was baked. Put one egg in the cheese stuffing and it will hold it in. Other than that good recipe.

Yes an oven, throw it in from cold covered with foil, temp 180C-350F 20-30 mins depending on oven.
