1)Cookie Dough of your choice - Homemade, Store-bought, or Frozen

Tips for Making Blackstone Cookies:
-Use the lowest heat setting possible. You want the residual heat of the griddle, not the direct heat of the griddle.
-Do not bake directly on the Blackstone Griddle.
-Use a baking stone or sheet pan.
-You will need a dome lid to create an oven affect around the baking cookies.
-The dome lid can be a large foil pan, the griddle hard cover, or a dome cover that is big enough to go over the pan you are using.
-Place the baking sheet pan on a wire rack or foil strips under the pan to lift it off the griddle.
-When checking the cookies, carefully remove the dome lid but don’t flip it over to let all the heat escape out. Keep it flat on the griddle to hold the heat into the dome.
How to Make Cookies on the Blackstone Griddle
1️⃣ Preheat the Blackstone Griddle to the lowest heat. Do not use any wind guards around the flat top griddle. When you use the wind guards, the griddle will get to hot and burn your cookies.
2️⃣ When the griddle is preheated, put a sheet of parchment paper on the griddle to help reduce the smoke coming off the hot griddle. Place a sheet of the parchment paper on the baking sheet pan. I like to flip the pan over and place the parchment paper on the bottom of the baking sheet. That way the pan gets the residual heat of the griddle and the large rectangular dome lid fits over the standard sheet pan perfectly.
3️⃣ Arrange your cookie dough balls on to the prepared cookie sheet pan. Place the dome lid over top of the cookies. Cooking times will vary from griddle to griddle. Let the cookies bake for about 10 minutes. Check the cookies by peeking under the dome lid and taking care not to let heat escape. You want a golden brown or lightly golden cookie bottom to achieve a chewy texture in your fully baked cookie. Adjust the baking time until the cookies are fully baked.
4️⃣ When the Blackstone cookies are done, use the hot pads to remove the sheet pan from the griddle. Leave the cookies on the prepared baking sheet pan until they cool completely.

Etsy of all places. I bought 2 when I found them.
So it's better to use a lid to cover rather than the lid on the griddle?
You can use either. My griddle does not have a proper hard cover, so I have to use a dome lid to cover any of my recipes.
