Excellent, credible video. I've been making onion and garlic powder (using your same dehydrator) for a couple of years. I'm still searching for the best process to do this. I like your suggestion of chopping your onions instead of what I do ... that is, slicing in rings before dehydrating. I also liked your tip to re-dehydrate the onion and/or garlic powder. One thing that your viewer might consider is that if they choose to "re-dehydrate" their powders, make sure that you turn the dehydrator off before you open the door. I made this mistake once when I wanted to check how the powder was doing. Not a good thing. The second thing is that the Excalibur dehydrator has optional powder-drying sheets that you can use instead of parchment paper. I like this option. I also pass my powder through a fine-meshed sieve after grinding and putting in the de-hydrator and also after re-dehyrdrating. An often-recommended tip (that I haven't yet tried) is to store your powders in a freezer.

I only grind small amounts of dehydrated onions up at a time ( enough for a month or so) and have never had problems with onion powder sticking together like that.
I have a ideal...how about taking kosher salt and cutting muslin squares and tieing up the salt into bundles and placing them into the jars, the salt would pull the moisture out of the powder. Might work!

For sure! I used roughly 15 pounds of onions and got 5 cups of powder. Each onion weighs roughly half a pound so each onion would equal about 2-1/2 to 3 tablespoons if my math is correct on that.

I made onion powder but didn’t dehydrate after grinding . And it is caked in bottle. Can I remove and dehydrate now or is it to late ?

I’m not sure what suji is specifically but if you mean the peels and such I freeze them and when I get enough I add it to broth or make an onion broth

Would this work with green onions or bunching onions?
I don’t typically cook with those so I can’t say for sure but I don’t see why it wouldn’t work 😀
