If you want to do dehydrated green onions, I would suggest you plant some perennial Egyptian Walking Onions. They have great flavor and produce a ton of greens. They will grow back year after year. Their flavor is incredible.
You are exactly right. When cutting the tops you do allow not only water, but bugs and bacteria to get inside the onions. I have found worms inside broken leaves in the garden before. But it is a great idea to save and use the green tops.
This is a late comment. This is what I do. I do not cut the onion leaves at the tops. I cut them from the stem just above the bulb. I make use of the stem and the leaves. The onions grow back rapidly. My way of cutting allows the onion to grow fresh new leaves. So whenever i harvest, I always harvest fresh new leaves.
I have TONS of these onion tops. I have two dehydrators going. Cant wait to put these up!! Great to have for a sour cream dip or mix in on baked potatoes and pasta with butter. 😋

In the future I will be sure to check the weather forecast before cutting them back. I finally went ahead and pulled them all up because they all started to produce multiple small bulbs rather than one big onion. I'm going to turn most of them into onion powder. ❤
Nice video. We have lots of extra onion tops this year. We have a video of "onion top pesto" that is delicious if you are looking for another recipe for the onion tops. But we will still have extra onion tops, so again thanks for the idea to powder the onion tops. We will be making onion powder this week.
Yes, the onion tops are huge and plentiful and it would really be a waste to just toss them into the compost pile when I can make delicious Onion Powder, Onion Salt, Minced Onion and Green Onion Pesto to add to my Homemade Spices Rack. It is so fresh and delicious!! I have all three of my dehydrators going right now drying my Garlic for the same spices. But I'll also add Granulated Garlic and Minced Garlic in oil or water to store in my fridge and use as I would fresh garlic.♥️🥰

Onions require a lot of nitrogen, so you may need to give them a good boost and add compost to the soil around the plants, of course not packing it in and leaving some room to grow. There are short day (south) and long day (north) onions according to where you are located. Perhaps you don't have the right kind? Water frequently and mulch. I topped mine at harvest before hanging the bulbs to dry (not too short; I left plenty for the neck to tighten and dry) and have them in the dehydrator now. Did you try a half and half experiment this year to compare size and rot?
They're very brittle after dehydrating. You could break them into pieces, but cutting would kind of pulverize them. Once dehydrated, no need to take up freezer space; you could still vacuum seal in a mylar bag for long-term storage (10-20 yrs) or in a jar for shorter term (5-10 yrs).
Maybe you could tie your onion greens into a knot then cut above that? Thanks for the green onion powder idea, I’m with your other viewer who wants to try leeks. Wish you had tasted it to heads up how the pungency compares to regular onion powder.

Sounds good. Many people said that rain will not affect them with the trimmed leaves, but like you said, I've found the opposite.

You should be able to, in the way you would any other powder. Just don’t want to get it over 105 degrees though, or it’ll lose nutrients.

Yes, they will cook very quickly, so put them in at the last minute.

I would try cutting 50% and see which ones get rot. if just the cut one get rot then you know if both get rot then it sound like the source bulbs.
