- Following our recent video on how to Grow Big Onions - we had a massive supply of green onions. We chopped and froze one bag of the, but still had tons. So we decided to try our hand at making onion powder out of the rest. We tried to dehydrate some in the over, and some in our Dehydrator. You can definitely tell which is which - the oven based ones are brown, and have much less flavor and aroma.

The Excalibur dehydrator is one of the best. My husband is an engineer so when he buys something he studies and looks for the best that we can afford. This was the one he hands down wanted to buy after all of his research. We love ours. I think I'll have to try making our own onion powder with ours.
great idea! I'm going to try this. One thing I do for a food flavoring that I love. It's an idea I got from my aunt in Quebec. I bought this little jar of minced veggies called, Herbes sale. Which basically means salted herbs. My aunt told me how easy it was to make and she showed me and I've been doing it since. So what you do is take your onions, celery, carrots, peppers, parsley and other different herbs (oregano, basil, etc.) and process them until they are all nice and finely chopped in your processor. You mix them all together, I set aside different herbs for different dishes and mix them in the veggie mixture in separate bowls. Then take your mason jars and layer the veggie mixture with course salt or kosher salt. So you have about 1 1/2- 2 inches of veggie mix and then top it off with a thin layer of salt, then do another layer of veggies and then salt again until the jar is full. I freeze the jars and then thaw one out at a time. I then put it in the fridge and add about a tbsp to soups, stews, mashed potatoes (the best!!) gravy, whatever your heart desires. Just don't add too much because it is salty, you also don't have to add salt. So with the potatoes I will use the jar that has the dill in it or the one with oregano and basil with pasta sauces or tomato base soup. It's so delicious. I try making big batches at a time so I can have it all year. The nice thing about this is that if you run out you can just go to the grocery store and buy more veggies and do more. I hope I explained this good enough.

I know this is a year old so you may not see this comment but....I've heard you say you use your oven on the proof cycle to let your bread dough rise, that proofing cycle only heats up to about 100⁰ so you could put your veg in to dehydrate on that cycle & it won't cook it like it did the batch you put in at 150⁰. I learn so much from you, thank you both for all you put on your channel 😊

The powder is wonderful in any savory cheesball recipe. It's also good on onion bread mixed with the fresh onions. You can also mix it up a salt substitute and or herb/spice and keep it on the table for that extra punch on pretty much anything. Thanks for the video!
Excalibur's are amazing!!!! Dehydrating below 105° keeps all the nutrition in them too ❤️ it's something like keeping the nutrition in the food live

Thanks to you. I just harvested my first batch of green onion tops while I was spooning them! ( First time onion grower). Froze half a gallon bag and I am trying drying 2 trays in the sun. Because I had thinned out my onion bed, I also replanted those bulbs last week and they are already growing new greens! So excited! Thanks for this video!

I dehydrate my onion greens too! I always put my dehydrator in the garage when doing more pungent smelling foods, otherwise my family is not happy.🤣

This is so good! I kept thinking that it seemed like a major waste to just cut the tops off and throw them in the compost. Glad to know that the powdered green onions are fragrant and flavorful.

I am on the lookout for a dehydrator...maybe I'll make one! My Grandfather made one for me when I was a young mom...it was huge! He made it out of plywood, with about 10 racks and it measured about 3 foot square with legs. He used a dryer element for the heat. Worked great! I wish I still had it, but too many moves in the last 40 years! 😆
Oh wow that sounds like a beast. Before we had our Excalibur we had two we picked up from garage sales, they seem to be pretty easy to find
Yep ! I'm making garlic scape powder at the moment ! My house smells soooo good ! I chopped them up in my food processor, put on fruit leather trays and are now dehydrating ! Chopping them up, sure saves on space in the trays, get more on a tray and dries a whole lot quicker. It doesn't take any time to whirl them up in the food processor ! Try Something New...You may be surprised at how much easier, quicker and can do them all in one dehydrator ! I'm a newbie to your channel...

That's brilliant! Still have some tops left in the garden, so this is on my project list this weekend! I had made cut chives dehydrated and frozen about a half gallon from last go round. I am excited to use the powder in a chive and dill bread recipe!!

I love my dehydrator! I just got carrots done need to do more trying to fill a 5 gallon bucket. Then it will be on to celery lol

We have a 1858 Homestead 🏡
We are finishing dehydrating our green onion tops now. We cut into random pieces and I was able to fit 1 to 1.5 quarts chopped pieces per tray (they were heaped a bit) and I used every other tray. But, using low temp like you they were done in 2 to 3 hours per batch.
I can see now, cutting them probably would have let us fit a lot more in at once. Will do next time for sure.
I made chive blossom powder. It was pretty. I use a lot of onion powder too.

That's such a good idea! I would love to know how it ends up tasting vs store onion powder. I miss my dehydrator. I can't wait to get to Michigan so I can get it unpacked and put it to work.
Taste a bit more "earthy" than normal white onion powder but still has a lovely onion flavor

I dehydrate my onions a spices in my oven, they turn out beautiful
I chop but not super fine only because I can pile them high on the trays and can get more per layer and they seem to dry well for me. But I love ❤ love zoning out listening to music or RUclips and just chop chop chop!
But I feel the same way making pasta ftom scratch and rolling it through the machine. Its kinda meditating for me I guess. 🥰I just calm down and enjoy.
Too bad I don't feel that way about doing dishes or folding laundry! 🤣
My oven has a dehydration setting. I tried it, and could get passed the idea of leaving the oven on for 12 plus hours. I got a 9tray Excalibur and love it. I have yet to have to put it outside for smelly stuff 😉

Hi there great video I just made some onion powder I dehydrated it and then goring it up but didn’t seem to get it as fine as yours and maybe I need to dry my powder a bit more should I just lay it out on parchment paper to dry on counter or put in dehydrator and what kind of grinder do you use

I watched your taco recipe and had to go back and see the video for the onion greens. I don't grow that many onions, but I do grow Walking Onions - also called Egyptian Onions. They are grown for their tops. Do you think I could harvest and freeze the onion tops until I had enough to dehydrate? I also have an Excalibur dehydrator? Thanks for your help.
Here’s a trick, always load from the bottom up, you will have far less issue fitting them in
The higher temperature you use will deplete the vitamin content, hence the reason the Excalibur uses a lower temper to save as many nutrients as possible
Hello. You mentioned to dehydrate at 95 to 105. Which is the optimal temp? Is it better to dry at a cooler temp for longer or slightly higher temp for a shorter time period? Thanks.
I tried putting them in the oven it was such a fail!! But! Then I dried them outside and they look amazing!! I also put them in the freezer!! I totally need a dehydrator...I got rid of mine awhile ago because we were moving 😭 boo! Hopefully Goodwill will come up with another one!

It's ok, I definitely use it often but I wouldn't call it an exact replacement for the flavor of typical onion powder

I never have, I've never even tastes a garlic leaf. But I do use the scapes. I think you could for sure with the scapes
I just made my first batch ever of dehydrated green onion powder and I'm wondering if it's supposed to have a very strong smell?? The smell doesn't smell exactly like an onion, is that normal?? Any advice would be great! Thanks!
I planted some grocery green onions & the onions grew to a medium size.. But, their green tops are huge. How can I oven dry the green tops?
Hi from Melbourne, Australia. Loving your channel and even though we are in very different seasons at the moment I am learning so much from you both. I usually only use the produce from my garden fresh but a lot does go to waste so I went outside today and picked a lot of my green onions ( spring onions) and dehydrated them. I have just made the most beautiful jar of bright green onion powder but I'm not sure what to use it on! Onion powder is not a commonly used ingredient in our cooking so I would love a follow-up video where you could show how you use yours. Keep up your amazing work. Looking forward to hearing how I can use my cabbage and broccoli leaves because I also have plenty of them at the moment.

@@1870s Why not add a little onion powder to your pork burger recipe. In the UK we make burgers with coarse pork, dried sage, dried parsley, dried thyme , dried ,garlic granules, fresh ground black pepper corns, deseeded chopped cherry tomatoes, fresh white leeks chopped fine in a blender and bread crumbs to bind it all together. Mix it through a grater 2 or 3 times and leave it overnight in the fridge .A sparse amount of the above herrbs is all You need and the flavours will develop overnight. We don't use milk powder, Maple syrup ,or cayenne pepper so perhaps you might like to try making your burgers with the UK recipe. I enjoy all your garden videos btw.
Dice the onions and make a green onion flavored oil. Use as a savory condiment.
Have year old green onions that need to come out of the bed. Some leaves are bigger than my thumb. Dehydrator is a Harvest Maid FD-50. Will those larger leaves be ok for dehydrating? Should I chop them down like I would if I was cooking them or using for garnish? I like the blender idea for onion powder, but what if I want onion flakes?
The huge ones can get stringy at times, I'd chop them up a bit for sure.

Hullo from New Zealand, :) I just found you and I am very happy to have done so! During your onion video and this one you talk about green onions....these are the ones you put in salads? We call them spring onions here. Bulbous onions are spanish or white or brown or red.....are we talking about the same thing? why do you need to make room around the base of a green/spring onion? I can understand doing that to bulbous onions. I hope you dont mind me asking such a question but it helps if I understand the same 'lingo' as you use LOL
the onions I am growing are not spring onions they are bulb storage onions. I thought I tried to explain it well enough, I learned the trick from an old farmer that spooned his onions. It's to give them plenty of free room to grow, onions in general do not like competition for space to grow and removing the soil also helps avoid certain disease like root rot. I know many people do not do this step and still get large onions, however after struggling for many years I found this was worked for me.
@@1870s Thankyou for responding....it is my misunderstanding not your lack of explaining it well enough. For Americans green onion is obviously a wellknown terminology but not in New Zealand. So initially I thought you meant spring onions....until i saw you spooning and then i got confused. Not difficult to confuse me these days lol. I hope you did nt mind me asking such a dorky question. Absolutely love your channel and just finished watching the New and Improved Sausage recipe (also something not common in New Zealand) and I think I will give that a whirl too :)

Do you find dehydrating the onions the smell is too strong in the house? I've heard horror stories about the smell. I'm waiting to find the Excalibur dehydrator on sale or on market place.
My oven lowest is 170...eeeh, I do think the meat of the onion would be stronger than the green but the color sure is pretty.
I watch a lot of cooking videos, well because I cook and love to cook. I sure love watching your videos they are just so good and you man is with you there's no crazy going on just good information.
I'm sure you don't remember but I watched your Pomona's Pectin with I think they were black currants where you used it and I never had because I was scared.... but I did with some berries I had and it worked. Did I do it wrong but it was like ... I want to say maybe an airey consistency or lighter than jam or jelly and not as clear... did yours look like that it's been at least two months, it taste fine but doesn't look as pretty? I know I kind of went off the subject sorry I was just wondering and thank you for all you do... Love you guys

You could, it may help long term. We use up pretty fast.
The onions you freeze don't get soggy and mushy after being in the freezer? This is something I'd like to try but with limited space it may not be worth it if it gets mushy! TFS

If you are powdering them all, then you would not need to chop them. Some people like to simply store them as dehydrated onions for soups, stews, cooking, etc. That is when it's helpful to have them already chopped. :)

You can tell a BIG difference , Bright and Brown...
I'm trying to figure out if I can use either:
- #Galanz3-in-1Microwave
- #NuwaveAirFryer
..to dehydrate as I'm not finding ANYTHING, on ANY "platform", ANYWHERE! (About dehydrating!)
Suppose, for now I'll have to test it and see how it goes. Small and slow *SHOULD* give me a general idea.
I'm not familiar with those units. A lot of people just use their over set on the lowest temp.
@@1870s thank you for responding.. unfort. the lowest my oven goes is to 170°. From what I have read so far, it looks like that's still too high.
The model of NuWave I have does go down to 100° though but it has an "auto built in feature", that if I try to "open" the basket- even a hair the "system" recognizes it and shuts the power to heat what's inside, "off"/"open".
...then the system doesn't work at all when it's open.
I think I'm just gonna give it a go with the NuWave, and just open it after 2-3 hrs to make sure it's not burning/cooking it.
(I'm going to "doc." my progress and hopefully I'll be able to upload/share it so that others can decide whether they want to give it a go or not.)

The oven one is a little to over done, which is why it is dark and has no smell. 150 is too high of a temperature for a green.
Drying
