I’ve been watching your videos for maybe a year now and it’s inspired me to start canning, but also I have anxiety and it’s been bad recently. Your voice and your videos are always so calming and wonderful, I love watching them. They make me feel better ❤
You will enjoy your sweet potatoes. I make sweet potato pies not pumpkin pies for holidays. My mom grew up in a large family and on a farm and in winter her poppa would fireplace cook sweet potatoes all day long so when they got home from school they could eat them as a sweet treat before chores, homework, dinner and baths.
Here's a tip - wash your sweet potatoes and place in large pot of boiling water. Cook for 5 minutes or so then remove and cool to the touch. the peeling will slip right off or easily peel off with a knife. Much easier and quicker! Then cut and place in jars and process.
New to your channel. I love how Todd helps you. My husband and I have been canning for years. He is hands on from planting to canning. Thanks for sharing.
Know it's a little late but if you will boil your sweet potatoes with the skin on for few minutes (10 to 15) then simply let cool without ice bath, the skin will slide off with a little rubbing pressure then all you have to do is cut off any blemishes. Maybe will help next year. Learned this at restaurant getting ready for Thanksgiving!
I am watching a bunch of your canning videos and appreciate that you made those and published them. I hope you are well and excited for spring and summer after the time away from the garden. I have learned that I take too much on…too many projects, too many plants, too many flowers. And then feel guilty when I cant get to all of it. This year I want to relax if I cant get to everything and embrace composting things if it doesnt work out.
We made a batch of Sweet Potato Hummus from a quart of canned Sweet Potatoes. It came out just like Chickpea Hummus. We just swapped out the sweet potatoes for the Chickpeas. We will be canning alot more sweet potatoes! We grow Japanese Red, Carolina Ruby, Diane, Garnet, Hanna, and Kotobuki sweet potatoes. We used the canned Hanna sweet potato. No one knew it was sweet potatoes in the Hummus! To cure sweet potatoes, we place them in plastic grocery bags with holes poked in them or clear plastic totes with holes for ventilation, then set in a sunny room for 2 weeks. Then store in a cool dark area.
I was just feeling waves of admiration when Todd came in to help. So sweet. But then…. He wiped his knife on his dirty pant leg and started cutting the potatoes with it. 😂 just like my husband. Gotta watch ‘‘em every second. Lol.
Oh man Rachel, I feel your pain! I have to say, Todd is so wonderful. So pleasant & helpful. You are my favorite RUclips couple. As always, thanks for your videos!!
I have nipped the end of a finger a couple of times using my mandolin. I purchased "anti cut" gloves on Amazon. I got 5 of them in a package and they really do help. If you do happen to get a nip, it isn't as bad and most of the time you get nothing. Give them a try!
I bought an electric mandolin after cutting myself really bad. And there is no way to get your hand near the sharp blades. It works really good. But the glove would be good when chopping alot of different types of food by hand.
She would die if she saw the commercial that interrupted the video RIGHT IN THE MIDDLE of that cut finger segment. At first, I thought the ad was a joke, but then realized it was just poor timing. It started out with this guy taking his wife to the emergency room, then she had an organ removed! That's when I realized it was not a joke or part of the video. OMG.
I love to see you wash the cast iron - I even use soap on mine, rinse them and after drying them really well I coat the inside with a very, very thin coat of olive oil. The pans never fail me - everything comes right out and the cooking is always very even. And Todd, you are a kindred spirit - after we sharpen our knives here, I must confess, we also wipe the knives on the leg of our pants. Thank goodness there are other people like us out there.
I cut my thumb using a mandoline. It was two months age and it's still sensitive! My daughter and I are just starting to can with a presto canner. We're going to do chicken tonight!
I bought on line the gloves that do not cut through and have not cut myself on the mandolin also will use them with my rotary cutter. Not to expensive for 2 pairs.
My friend who was a nurse. Showed me what to do with a bad cut. I did one on a mandoline when I had my bakery. She put a bandaid on it really tight around my thumb. And told me to leave it like that for 30 minutes. Then remove, it should not be bleeding anymore. And mine was bad. Then she put on a new bandaid a little looser. Because your digit will feel numb. Because of the tightness of the first bandaid. But that makes it stop bleeding. And it worked. I just wore a rubber glove on that hand over the bandaid. Remember, working with food!
So nice to meet you. I just came across your channel. I am a pressure canner addict. I just can't stop. Nothing like going into your pantry and seeing nothing but goodness. Our canned food in the store is terrible. Full of ingredients half of us don't even know what it is. I do a lot of one jar meals. Beans and veggies. I just picked up about 30 pounds of yams ( sweet potatoes ) because they had a crazy sale on them at the market. One nice thing about this pressure canner is looking for deals on veggies or meats as groceries are just getting out of hand. I find it very satisfying opening up your lid and taking the jars out boiling like mad then hearing the pop!
I love bamboo "paper" towels! Washing and using and using and using.......I also had scraps of flannel and terry cloth, so I sewed them back to back and they are homemade paper size towels. Infinitely washable until they wear out - it does take some time for them to wear out.
Thank you for sharing the sweet potato canning... didn’t know that was a thing... we get the heat and humidity to store the sweet potatoes in our garage. I hope your finger heals quickly 😊 You are a trooper for pushing through!
Multi purpose towels!😬 today is week 2 for one sweet potato and we may bake tonight! After your harvest I just had to go dig one up! But keeping in ground until just before frost! Kristy in Missouri 😃🇺🇸🇺🇸🇺🇸
I thoroughly clean my kitchen before I can as well. I LOVE my bamboo "paper" towels! They were the best investment. I am so glad you shared about them. Oh Rachel! I'm watching this while eating supper.... Glad we didn't see your injury! LOL I'm going to need to try canning sweet potatoes now.
I had just wrote to you how I have never seen a potato peeler like ,but as I was watching you cut yourself and that worried me !! And for you to carry on WHAT A TROOPER!! Thank g for Tod to the rescue!!!
You are magical ,you never stop !!! I have not seen many videos of tod cooking ! You make everything in the canner ! You guys are so interesting and keep them coming ! So many interesting recipes !! Give me so many good ideas !!
Now, I am having a craving for sweet potatoes and pumpkin items even more!! 😁Sorry, you sliced your finger. I know that hurts. It is so great that you have a loving husband to work with you on getting the project done. They look great and will certainly be a help this winter for delicious meals. 💗🙏.....................Patti
You look great in that shade of green and love those glasses on you. Sorry about your finger but good thing was it was not your GOOD hand. Thanks for sharing. Will be harvesting my s.p. after a few frost's. God bless.
Not sure why or how it works but I just put my sweet potatoes in a basket under my basement stairs and they last for 2 years, they even dry out as if they are dehydrated but turn out moist and juicy after baking them
I have cut my finger and thumb both severely with a mandolin. So I do understand what you're going through and how frustrating it is...not to mention painful! God bless you for continuing for us.
Oh No!!! Is your finger okay? I’ve done that before and it literally took the tip off my finger and I immediately ran it in cold water and it began to burn soooo bad but I did mine with a mandolin because I wasn’t using the guard...note to self and anyone else reading...those finger guards are there for a reason!!! Use the finger guard when slicing with a mandolin!! I sure hope your finger heals well and is okay. I also noticed you mentioned making a stir fry for dinner and using leftover cabbage, just curious if you’ve heard of “crackslaw” it’s nothing like coleslaw, it’s a hot meal and you can make pretty much any meat with it and any kind of sauce you like, I typically make a Chinese teriyaki type flavour with Tamari sauce or coconut aminos instead of soya sauce and I add fresh minced garlic and water and some surkin gold which is a sugar free brown sugar substitute. Anyway do a search on google for crackslaw and you’ll get a ton of various recipes. You’ve probably already heard of it but I hadn’t and I couldn’t believe how incredible it tasted and easy and fast it was to make with ground beef or leftover chicken.
they look beautiful. Today i canned a bunch of orange ginger carrots. I am just waiting for the pressure to go to zero so i can see them. Love your channel....hope your finger is better.
Rachel, I’m So sorry you cut yourself!! Ouch!! I hate cutting myself. Those potatoes look incredible. I’m sure you will be so glad this winter that you canned them. It’s a lot of very hard work, but well worth it. Todd can really cut those vegetables up fast. Man hands and strength, I believe. Glad he was able to help you!! Blessings always. ❣️♥️❣️
Our first batch of coleslaw/pickled green cabbage, is cooling on the bench next to apple slices and lemony pickled cauliflower. And 2 big jars of apple scrap vinegar is going to slowly ferment over the next few weeks from the "waste". Perfect.xxoo hope your finger gets better soon, mine was on the food processor blade after doing the cabbage. Totally worth it.
I made raw packed sweet potatoes a few weeks ago. Now all I can think about is sweet potato pie. Sorry about your finger, I know that hurt. I always have carb cravings summer or winter, lol. They do look amazing in the jars.
I have butternut squash in the canner now. Haven’t dug my sweet potatoes yet. Yours canned beautifully. Ouch on that finger. I’ve done the same thing and blasted, it hurts. Now you can enjoy that pumpkin bread...tee hee. God bless. 👏🏻💕👏🏻
Pro-tip for curing sweet potatoes in colder climates. Place them in big plastic storage totes with a good lid and stick a heating pad or heat mat under them on low. I sprinkle about a 1/4 cup of water in there as well.
Haha I love what you said about Todd thinking Pumpkin Bread sounded good too. Haha. You want them to be supportive but it's nice when they cave with you. 😉😂 Sorry about your finger! Ouch for sure! Hope you guys had a wonderful weekend!
Ugh, ouch, I'm so sorry you caught yourself! That hurts, but the sweet potatoes were beautiful and I hope you got to enjoy some pumpkin bread this weekend!
Ahh the only reason Todd chops faster is because he uses a bigger knife. Try that. You will be far stronger cutting through the spud with a heavy knife. Just keep those fingers tucked in. Excellent canning tips!
I'm not sure Rachel saw this, or if she an find the link. Comments get buried easy these days, and we can't keep up well. Try send a message on Instagram or to our FB page. - Todd
You are a real blessing to me, I love your true to life things that happen. I am waiting to get my first presto 16 quart pressure canner with the gauge. At 69 years old, I will make an outdoor space for my canning. We rent a place and it has a wonky flat top stove, which I hate, but it will work outside. What kind of outdoor stove do you use? Pat from the Oregon coast.
Here's the outdoor cooker we use. amzn.to/3mYPGrP Be careful with the heat though, on a Presto. The metal walls are a lot thinner than our All American, so with any propane based cooker, you run the risk of damage if you run the heat too high. If you keep it Medium or below, you'll probably be fine. Just don't crank it up full blast.
Oooof. I hate cutting my fingers. Sometimes, it does happen though. Right now, I'm dealing with two wounds on my fingers from cleaning out the garden and pulling hay off the round bale. Thank goodness I'm on tators and carrots and already have the tomatoes done! Co-Flex aka Vetwrap is THE BEST for securing finger wounds in wet conditions. I learned that the last time I processed my chickens for canning. A little piece of gauze and a chunk of vetwrap and I was able to power on through, despite taking it to the bone. No infection and was healed up in less than a week. But then, I take gobs of Vitamin C and collagen too.
I was given a box of white sweet potatoes this week. I think this weekend I want to try to can them!! I will do those, and maybe some white potatoes. I was given 2 5lb bags of them, and need to use 1 bag so... I have a brand new canner (the 1st one that's my own and not borrowed) and I have so much stuff I want to do but no idea where to start! LOL I think it maybe be potatoes!
Sorry you cut your finger, hope it heals soon.🙏 Loved your vegetable peeler, where did you get it? The extra jar of potatoes would make a great Sweet Potato Pie, just mash the potatoes and make it just like you would a Pumpkin Pie, DELICIOUS 😋 I love roasted root vegetables. Just pick out a variety of root vegetables of your choice, throw in the sweet potatoes and I always add onions. For me this is a Meatless Meal, I LOVE IT🥰😋😋🥰 Have a blessed day, stay safe and healthy 👍🙏🇱🇷
Love this, I love sweet potatoes in the south were im from we bake them and bitter and blackstrap molasses on them so good, and then sweet potatoe pie yummy so canning them would be awesome.. thanks for sharing love your videos
So many root veggies (beets, yams potatoes) ... slip out of that skin... by boiling them about 5-10 minutes and plunging them in cold water. So much less waste of product... especially on those curves. I always do this with beets... then wrap them in foil with olive oil, rosemary and a sprinkle of salt/pepper and roast them to finish cooking. DELISH.
He needs to make you one of those choppers like Wanda has! Made from a machete bolted on the point end like a paper cutter that hinges! I’m going to have my husband make me one for squash and sweet potatoes!
OOOH Rachel !!! I thought as I was watching - " Please stop cutting that way"- How is your finger I imagine very painful. What do you do with the canned sweet potatoes please ? Can you bake them ? or are they just good for baking/ stews & soups ? Thanks Todd for coming to her rescue - what would we do without you !!!! Cheers Denise Australia
Nice to have Todd’s help. It was me. I called him. You’re welcome. Lol! Let us know what the texture is, someone else said hers were mushy. I’m wondering if it depends one the variety like it does for regular potatoes?
Girl I have been canning sweet taters for a couple years now. You have got to try sweet potato cinnamon rolls oh yeah ! Sweet potato pie is better than pumpkin. I can’t wait to see what all you come up with this winter. Love your channel , so glad I found you and your sweet hubby. Oh no I’m sorry you got cut bless your heart . We need gloves to protest our hands when peeling . Hope you are ok ! Raw pack will be ok I do some that way to ! Push on sweet girl .
Kuhn Rikon makes a Hold Peel/Pop tool that will help prevent these painful accidents. It has rings that go into the veggie and gets your non peeling hand out of the line of fire
Oh my gosh. I did that peeling potatoes. A huge chunk. It took a long time to get it under control. I ended up with a paper towel and gloves. I feel for you. I was just going to ask about your peeler 🥴
oooh. Sweet potato fries. I'll be right over... I know what you mean about the convenience of the canned Irish potatoes. I have really appreciated having potatoes, and carrots, canned up and ready to go. I want to can sweet potatoes (if we get any, I got the slips in late), and some butternut squash and pumpkin. I've been in a mood to make my apple cake. And cookies. Made bread today. The leaves just started changing to gold and red down here in Indiana, so my baking gene has been engaged!
Rosehaven Farm, how long do you process your butternut? I have two very long Tahitian squash (gigantic butternut) that I really want to can too! Thanks for your response
Heather Keller we grew tahitian butternuts this year, too! Aren't they magnificent? Did you know you can eat them young? Very good. Cut into rounds, sautee, sprinkle with salt. I'm making a cheesy casserole with the rest of the thing tomorrow. We've been holding our squashes in our little root cellar the last few years...I canned pumpkin several years ago, and I didn't remember how long, so I looked it up. "Putting FoodBy" says 55 min pints, 90 min quarts, 10 pounds pressure. As you know, only 1" cubes, not puree. Have fun!
I’ve been watching your videos for maybe a year now and it’s inspired me to start canning, but also I have anxiety and it’s been bad recently. Your voice and your videos are always so calming and wonderful, I love watching them. They make me feel better ❤

Yes! I was gonna link to that on National Center for Home Food Preservation! nchfp.uga.edu/how/can_04/potato_sweet.html
Awesome tip!!!!!! Especially since sweet potatoes grow in crazy shapes!
Ty
Thank you!
Thanks so much for this tip!
I say people "squirrel up" in the fall and winter. That's why we want all that kind of foods. 🐿🐿🐿🐿🐿😁
New to your channel. I love how Todd helps you. My husband and I have been canning for years. He is hands on from planting to canning. Thanks for sharing.

Thank you for sharing! Have a lot to can, huge ones. This will help a lot!
My wife interchanges sweet potatoes for pumpkin things and also mixed half and half. Great in muffins, breads, cookies, cinnamon rolls.
Such a great man pitching in and helping you get everything done!!
That last sweet potato you held up looked like Yoda holding up a light saber..🤣
You will LOVE having those canned sweet potatoes in your pantry!! So handy, and nice to have all that nourishment in a jar!!!
Hope your feeling better and you both had a awesome weekend thanks for sharing all your tid bits... God bless you both and your family...
Thank you! You too! Finger is healing up nicely.
Oh man Rachel, I feel your pain! I have to say, Todd is so wonderful. So pleasant & helpful. You are my favorite RUclips couple. As always, thanks for your videos!!
Thank you so much! We absolutely love being someone "favorite" 😇
I have nipped the end of a finger a couple of times using my mandolin. I purchased "anti cut" gloves on Amazon. I got 5 of them in a package and they really do help. If you do happen to get a nip, it isn't as bad and most of the time you get nothing. Give them a try!

You gotta that little "dust" off the edge of the blade, once you hone it somehow right 😊
I Love the Bamboo paper towels!! One of the best things I’ve bought!
I just added to order 🙂.
Your sweet potatoes are GORGEOUS all canned up for the winter ❣️
Oh yes!
I totally prefer sweet potatoes to any other potatoes. Your harvest was awesome. Keep up all the amazing work y’all are doing. ❤️🌱🍠
Thank you! Will do!
Love that your hubby helps with canning.. mine does too... such gems :)
I ordered the bamboo towels from your link. Can’t wait for them to arrive. It will make clean up so much easier. Thanks.
Awesome! Thank you! I hope you enjoy
I’m sure she knows she’s working with food 😉
@@spicyavo3929 not saying her. But alot of people that have not worked in the food business might not know.
Sounds like you are excited about the fall weather.lol me too
Finally found a video that just added salt and no sugar! Thank you!

Thank you for sharing the sweet potato canning... didn’t know that was a thing... we get the heat and humidity to store the sweet potatoes in our garage. I hope your finger heals quickly 😊 You are a trooper for pushing through!
So glad you shared this, now I can do it too. Minus the finger cutting I hope. Feel better, love your channel.
oh my goodness double stacking quart jars is amazing. my little presto lets me double stack pints. Workhorse indeed.
New Favorite RUclipsr. I’m feelin’ those carb cravings too.
Multi purpose towels!😬 today is week 2 for one sweet potato and we may bake tonight! After your harvest I just had to go dig one up! But keeping in ground until just before frost! Kristy in Missouri 😃🇺🇸🇺🇸🇺🇸

Oh Rachel! I'm watching this while eating supper.... Glad we didn't see your injury! LOL
I'm going to need to try canning sweet potatoes now.
The jars look amazing and I'm so sorry you injured yourself. I'm sure you will enjoy them greatly all year!

I love to see couples working together. ❤
You are magical ,you never stop !!! I have not seen many videos of tod cooking ! You make everything in the canner ! You guys are so interesting and keep them coming ! So many interesting recipes !! Give me so many good ideas !!
We don't really do a lot of "cooking dinner" videos really. Mostly preserving. Maybe this winter, we'll try to do more.
You got the job done. They do look beautiful
BEAUTIFUL good job honey, I had a bag of sweet potatoes given to me and my husband loves them so a canning I will go, Thanks for the tips
That was a lot of work, they look so beautiful in the jars. God bless :-):-):-)
God bless.
Not sure why or how it works but I just put my sweet potatoes in a basket under my basement stairs and they last for 2 years, they even dry out as if they are dehydrated but turn out moist and juicy after baking them
Our basement seems perfect for them too. We still have some from last year down there, still perfect.
That is funny. We are in CO but that's what I told my 8 year old - someone should call her hubby LOL - too cute guys!
just found your channel...I am in Michigan also...love the video...thanks for sharing ❤
I have a 97 jeep wrangler...so much fun
I did the same thing 6 weeks ago... all I will say is OUCH! I hope yours heals quickly!
I have cut my finger and thumb both severely with a mandolin. So I do understand what you're going through and how frustrating it is...not to mention painful! God bless you for continuing for us.
Thank you for this video. Love new ideas for carbs. Such comfort food for the soul.
I love those paper towels! I got them from your recommendation when you were showing how to store your lettuce and such in the fridge.
You are so welcome! Glad you like them!
I like way she did her sweet potato
You really got alot of sweet potatoes. Beautiful

The wonderful Winter comfort foods ❤️
The salt helps also as the preservation agent.

Very real site, thanks

I love this, my sweet potatos will be ready soon. I can't wait
lovely video
I love sweet potatoes and pumpkin with just butter and salt and pepper.
Thx for the video and glad your finger is ok
I scrub mine, cut them in 1/2 or1/4 & blanch them with the peels on, cool them, then peel and cut if needed. Much easier.
Beautiful!
I’m envisioning Todd in cape and tights! Thanks for pitching in! So sorry about the mishap. I’ve done that and it’s NO FUN!
Ahh the only reason Todd chops faster is because he uses a bigger knife. Try that. You will be far stronger cutting through the spud with a heavy knife. Just keep those fingers tucked in. Excellent canning tips!
Mmmm can you share the burrito casserole recipe??
Love sweet potatoes!!
yes please

Great video. Take care and hope your finger heals quickly!
The extra jar of potatoes would make a great Sweet Potato Pie, just mash the potatoes and make it just like you would a Pumpkin Pie, DELICIOUS 😋
I love roasted root vegetables. Just pick out a variety of root vegetables of your choice, throw in the sweet potatoes and I always add onions. For me this is a Meatless Meal, I LOVE IT🥰😋😋🥰
Have a blessed day, stay safe and healthy 👍🙏🇱🇷
Love this, I love sweet potatoes in the south were im from we bake them and bitter and blackstrap molasses on them so good, and then sweet potatoe pie yummy so canning them would be awesome.. thanks for sharing love your videos
I've done that too. I wear my mandolin glove all the time now.
Sorry about your finger - I feel it!!! Thanks for this video!
Nice to have Todd’s help. It was me. I called him. You’re welcome. Lol!
Let us know what the texture is, someone else said hers were mushy. I’m wondering if it depends one the variety like it does for regular potatoes?
They look perfect.
enjoy those sweet potatoes because they look awesome
I don't dare to say that I've never... well, you know. I'm sorry you ended up getting hurt. Enjoyed your video, Thanks!
Push on sweet girl .
sweet potato cinnamon rolls.... hmm. I'm going to have look that up!
Kuhn Rikon makes a Hold Peel/Pop tool that will help prevent these painful accidents. It has rings that go into the veggie and gets your non peeling hand out of the line of fire
Beautiful job on the sweet potatoes! Sorry for your finger!!! I know how that feels...heal fast!
Perfect conditions here in Fla..for curing, yay 1 thing we got going for us,lol
Oh my gosh. I did that peeling potatoes. A huge chunk. It took a long time to get it under control. I ended up with a paper towel and gloves. I feel for you.
I was just going to ask about your peeler 🥴
Cinnamon rolls....where???!! 👀👀 😂
Have fun!
Looks amazing as usual. Can on!!
Thanks so much!
