  • Chef and Caterer Edouard Massih is here to talk all about sumac! Sumac is a citrus type of spice that comes from a plant in the cashew family. It originates from the Middle East, mainly found in Turkey, but has also made its way to Syria, Lebanon, Palestine and Jordan. It's a beautiful and delicious seasoning that tastes lemony and salty, and has a natural red dye that can give your dish that color as well. Edy tells us more about his love for sumac and how to make sumac dressing and fatoush salad.

    I didn’t know much about Middle Eastern food until my study abroad year at the American University of Beirut about 10 years ago. What a wonderful experience! Lebanon is simply a breathtaking country, a combination of Tuscany, Southern France and Spain,and you get Lebanon.
    I just love Lebanese, Palestinian and Levantine gastronomy, it’s probably the best in the world. Greetings from a Norwegian who really appreciates your culture!

    Love this Chef and his videos! How to use sumac in a dressing, cutting a tomato to eliminate most of the seeds, and pita strip/chip croutons; fabulous!
