    Hi There!! Love the Video. 2 Things .. Za'atar is actually a mix of Sumac, Dried Thyme, toasted Sesame seeds and a little bit of olive oil and it is EXCELLENT as a seasoning but also as a dip or if you mix it with more olive oil to make a paste to spread on toast. The other thing is Sumac is INCREDIBLY flavorful on Roasted Chicken. Try making a spice rub with Sumac and cover some bone in, skin on chicken thighs then roast them in the oven or on the grill. You can't beat it.

    I make this every year. I use my coffee grinder to grind up fine. I also use the whole fresh berries to make sumac "lemonaid". Soak fresh berries in water for a few hours, strain through a cloth and add honey. Same properties and tastes great.

      So, it's okay if the seeds get ground up too? I couldn't tell if Micah strained out the seeds or ground then up.

      @@jdriver1419 they definitely got cracked up in it, but 99% of the seed got sifted out. I put it all in the oven to finish drying, and sifted it again through a flour sifter. I’ll be using the seasoning soon!

      @@McGieHomesteadAdventures okay, that makes sense, cause seeds tend to have the concentrated "poisons " in plants and trees. Like cyanide in Mahonia seeds or cherry pits. I figured sumac seeds gotta have something bad too since it's in the Rhus genus.

    Hey Buddy. Following your lead on this one two. Lots of Sumac on my land. And I’ve heard for years the Native Americans use this for seasoning. I tasted it last fall and it taste like lemon. So I imagine this would be great on fish and chicken. Boy hanging with you, an old dog has no choice but to learn new tricks.😂

    Za'tar is a plant in the mint family which grows wild in the Middle-East. It is completely separate from sumac which also grows wild in the Middle-East. Za'tar is similar to thyme. Sumac is similar to lemon.

    I didn’t know the American sumac was the same as the middle eastern spice. I love love love sumac - it’s got a tart, citrusy taste! It’s utterly delicious on a bowl of rice.

      doing a little homework on this: the middle eastern tree is a cousin, not the same; the north american version is slightly different; primarily: more cold-hardy, and probably a compositional differences.
      they're two different genus in the same species; but close enough 'cousins' to swap out in recipes.

    If you are having issues with crunchy bits left over after sifting, I recommend only a few brief pulses with your food processor instead of leaving it in for longer periods of time. This will cause the husks to get knocked off the seeds, but the seeds will still be mostly intact and will not sneak through the holes in your sifter. Maybe it has something to do with the species that you are harvesting? The ones that I have here in Ontario have fairly large smooth seeds, so after a few short pulses, the seeds are still whole and can be easily separated in the sifter and they won't make it into the final product.

    Nice video!! Isn't really a lot of them out there about sumac. I harvested a bunch from a local park and the malic acid was so concentrated that the berries had thick white coating on them. I used the clusters to make lemonade and since the clusters still had a ton of tart flavor to them, i cut up the clusters to leave individual branches and removed as many bugs and spiders as possible. (Yes those were in there for the lemonade, oops). Dehydrated it and used a pestle to grind the dried berries against a sturdy wire strainer. Worked great! Still enough berry on the seeds to make another batch of lemonade!!

    Gather it myself for making Sumac tea. Tallest plant I've seen in SE Nebraska is about 6 feet.

      @@McGieHomesteadAdventures here’s the recipe, turn the caption on ruclips.net/video/PIZQMMhoX_Y/видео.html I add yeast to the dough and minced garlic , pomegranate molasses, half of a pomegranate to the stuffing ( you can use frozen spinach ) and it’s better to add olive oil rather than vegetable oil.

    Great video! Get a coffee grinder. You can even get a hand crank one (new one or an antique). I use a coffee grinder for my hot pepper seasonings.

    Loved your video, first i've seen and love your fam's participatio! I use sumack as i get it from the Asian/Middle Easterb stores in my hometown. We bought a house with an unfinished lot and i want to plant only medicinal and useful landscaping. The sumack is sooo beautiful. I love making tea and broths. I use it in so much in cooking now, lol! Can't wait to tey making a lemonade out of it. I live in AZ, so have to see if the weather permits. Thanks for the post, i kearned a lot.😊

    My sainted Grandmother used sumac (which she called 'shoemake') among the several ingredients in her famous home-made black-as-tar cough syrup. I'm not sure that the concoction actually affected the underlying cause for the cough, but it made you really WANT to not cough lest you might receive another tablespoon of the terrible tasting stuff. And the taste just lingered and lingered. Maybe it really did help...

    Sprinkle it on a fish fillet with butter and bake in the Oven. I would bet it will be good if it's got a lemon flavor.

    Staghorn Sumac : I use it as Tea , Place 2 or 3 clusters per gallon of cool water and steep over night or so .. Be sure to filter through a coffee filter as each berry is covered with very fine irritating needle like hair that will irritate your throat .(looks and feels like the velvet of a stag Deer antler ) . When finished it Looks and taste exactly like Lipton Green Tea , sweeten with natural stevia if desired ..

    You can use a coffee bean grinder to reduce to a powder. Za’atar powder is a mix of sumac, sesame seed, and thyme or oregano. I am right back in Jerusalem whenever I smell it. Loved this video.

    Question: do you grind the seeds down , or just pulse to knock the "red" /outer part of the dried fruit off?
    I didn't see if the seed was tossed or ground up into the mix, with fine-powder of exterior and interior seed being used & only the hard bits being tossed.

      I blended the time out of it and the seeds were completely unscathed. They got sifted out, but it was a pain to be honest 😅😂

    This plant grows in my backyard. My mother-in-law calls it elderberry but I've been saying its poison sumac. Now I'm thinking it's the edible kind. It makes red berries.

    is there more kinds of sumac? up here in maine we have some but the old timers always say poison sumac so ive always left it alone and just enjoyed is coloring.... we have one next to our outhouse

      I’d recommend looking it up online to be sure….. but I’ve always been told if the berries are red, they’re safe!

    Zaatar has sumac in it but also has thyme (a strain of thyme that grows in the middle east specifically), salt , sesame seeds and sumac. That combination is extremely healthy. But sumac alone is not zaatar.

    Staghorn sumac are only one of many berrys that are out there for the picking.
    Lots of people don't know or over look as trash.
    Possum grapes and goose grapes are good but nobody hardly know what they are.
    There's an app that you can download and tells and shows pictures of the plants and herbs and uses.
    I also seen on another channel how to select acorns and prepare them for meal.
    The Indians used them in place of meal.
    Good video again as usual.
    And tell the ol buzzard we're still keeping him in our hearts and prayers.

      Good deal. Reckon they're trying to get rid of him for being to frisky with the nurses.
      I know know when I stayed overnight and doctor visits there were some fine specimens there. Maybe they were keeping him heart rate and blood pressure to high.
      You know how us ol hounds are we can still chase the cars but can't do anything but sniff the tires when they stop. LOL

    What!, Ive always been told it was bad for you....something my mom would say to us when we were little and putting everything in our mouths. I guess it stuck with me all this time. I love learning new natural remedies.

    Ive made Sumac-ade a number of times now from my local smooth sumacs. My main issue with making use of it is that ALL of the sumac i find seems to be absolutely LOADED with spiderwebs or something, all through the clusters, of every cluster, is just loaded with web! Im hesitant to wash the sumac as ive read that it washes off that nice red coating.

      My family uses staghorn sumac all my life and as children we enjoyed them fresh when they had the white salty film on them good sour salties we called them
