what does Xaoxing wine do? i see many dishes use this wine.

I like the idea..But those big slices of ginger?..Who on earth would want a huge uncooked slice of ginger.
Adding it at the start might have saved that..
But then the near raw Coriander un chopped..
Best thing would be replace the sliced ginger with water chestnut sliced for a welcome crunch and add the ginger 50 50 with your garlic minced..
