      Really moist flesh. Not oily. Sweet. Its fairly forgiving in that slight overcooking doesn't ruin it. Its soft a bit like barramundi but less cooking time. Its versatile. I like steamed and scalded with very hot oil chinese style. Scald shallots and garlic and pepper over it after steaming with smoking hot rice bran oil. Lovely. The large ones collect a bit of mercury so i recommend fish at 1 metre. Estuary caught are good but ocean caught when they are real silver are better. Cleaner taste. Enjoy the challenge of catching them. Remember to take only what you really need as they don't have a a good release rate. I would say 80% do not survive capture even if swum and released with care. They stress easily and are very susceptible to barro trauma. If you find a spot where they bite take note of the tide ,moon etc because you will get them there again. Take only what you need not what insta photos demands. Good luck and hope to see you out there!
