Weber Performer 1 Year Update and Perfect Cheeseburger

  • How the Weber Performer held up after 1 year. Cooking great venison and beef bacon cheeseburgers.
    Weber Performer 22” review after 1 year of use.
    My impression of the grill has been very positive. I have used the Vortex, the Slow ‘N Sear 2.0, the Easy Spin Grate, and Drip and Griddle Pan from Adrenaline BBQ. Everything has help up perfectly.
    For the burger cook. We started with our homemade bacon, placed it on the grill on the indirect side. It took about 10 to 15 minutes and made the bacon perfectly.
    We had four 8 oz burgers, 2 of beef and 2 of venison with pork fat. Cooked them indirectly until they reached 115 degrees, flipped them until they reached 145 degrees. At that point we seared them off and they finished around 155 to 160 degrees.
    We then toasted the buns over the direct side, we did add butter to the buns.
    Once everything was done, we built a beautiful venison burger. Dinner was great!

    I'm curios how much charcoal will you keep on hand, the sales they have are enticing and when your not sure when the next sale might take place I have tendency to buy. How long would it take you to use 200lbs of charcoal,50% lump 50% briquttes. Nice demonstation, you should get award for cooking bacon like that, I thought that might fall thru the grates.

      John Knapp That bacon turned out better than I was expecting! Tough question on the charcoal, I do the same thing, I have probably 200 lbs in my garage and Costco just started a sale on Kingsford and I bought a double pack. LOL My guess is I get 4 to 6 cooks out of a 20 lb bag. Possibly more out of lump depending on the cooks. Let me know if you are thinking the same way?

      Great question.
      I am curious myself. I am a newbie to charcoal...in my mind I was thinking I am spending $1-$2 worth of charcoal every time I fire it up.
      I bet someone has the cost of each briquette.

    Love this grill. Got mine off Facebook for $100 and sold my One touch gold for $60. The performer kettle was really dirty but after multiple cleanings it was close to brand new. Can’t really imagine needing any other charcoal grill when one has the SNS combined as we do. It just works flawlessly.

    Spinning the grate is something that never occurred to me. Holy smokes, grill smarter not harder! Good stuff.

      Christopher Terry Yes, it works great. Just so you know, this is a grate from SNS Grills called the easy spine grate and does not get caught by the tabs that hold the grate in place. Hope that helps! Cheers!

      The problem with spinning the grate is that the cooler part of the grate will take time to heat up versus just lifting and moving each burger to the searing hot pre-heated part of the grate.

      thajman You are correct and if you want the grill marks, you would not spin. They actually call it the cold grate technique, I am not worried about the grill marks, so I like that I can turn the grate, but it is all about what you like to do. Cheers!

    Has there ever been a time where you wish you had the larger table space of the larger performer. I’m trying to decide between this one and the larger version.

      I get asked this question a lot. I had a tough time deciding myself, but I went with this model because I have a decent sized table on the patio and I have a folding stainless steel table that I bring out at times, so I have plenty of space if I need it. Plus I have added a few other grills to the patio, so the smaller footprint is better for me. Good luck on your decision! Hope I helped and didn’t add more confusion! LOL Cheers!

    I bought the same grill in May of 2023. Fast forward almost a year and the table on it is beginning to rust. I understand how that can happen along the edges of the metal because they're harder to get a sufficient amount of paint, but this rust is forming right on large flat sections of the table. There are 3 spots. The one is about the size of the palm of my hand and the other 2 are about 1/2 the size

      I would contact them about the issue. I had mine for a few years before I gave it to my son in law, but as far as I know, never had a rust issue. Good luck to you! Cheers!

    I am still using my Weber Kettle from 1997. I am thinking about upgrading and still debating whether to go for the Performer series or the Master Touch. Which ever I decide, as your video shows they are great products.

      Yes, this was a great grill. I actually gave this to my future Son In Law and got the SNS Kettle. Whatever you choose, I am sure you will be happy with your purchase! It is always a tough decision when you go for a new grill. I struggled before I bought this one. Cheers!

      I actually don’t have this grill any longer, gave it to our son in law and replaced it with the Slow ‘N Sear Kettle. Nothing wrong with this grill, just wanted some of the extra features and SNS had. Tough question on which grills, for the RUclips videos we try to show the same meats cooked on all of the grills to cover a wide audience! Here is just my preference on different cooks. I think I get the best smoke flavor and darkest color on the SNS Kettle, so I like that for my homemade bacon, pork shoulder, steaks and chicken thighs/wings. I think my Kamado Joe keeps the most moisture and even heat, so I like to do ribs, brisket a whole prime rib. I have a Blackstone, so I do smashburgers, quesadillas, fried rice, etc… I also have 2 Rec Tec’s, the 590 and just got the 380 and I have cooked all of the meats I mentioned on those. I do have grill grates for searing and that works nice on the pellet grills. I have been using the pellet grills more often, mostly for convenience because you plug them in and pick a temp, so laziness plays a factor at times. LOL This was a little long, but if I missed something or you have a specific question on a grill, please let me know! Cheers!

    but you don't mention for how long you keep the burgers cooking? each side?

      Moving forward we do try to reference times, but since we had these probed did not pay too close attention to that. My guess would be around 15 minutes before flipping and about 10 until we started searing, but that is a guess and I would rely on the probes to help along. Thanks for watching! Cheers!

    i live in australia i have a weber performer but didnt realise you can use that rail to rest the lid! I would always put the lid on the ground lol they look like great burgers and i learned a lot thank you!

      Ron DMC LOL Glad the video showed how the lid worked! We put our Christmas tree in the same corner each year and for 8 years I crawled behind to plug it in. The 9th year I plugged it in and it did not work, I realized we had a wall switch that operated the switch and I no longer had to crawl behind each day! LOL Glad the video helped. Stay safe!

    I've gotten into the groove of using the performer and SnS and wow. Amazing. To clean the grate, I use a heat gun on the grill then use a grate cleaner. Works well.

      Yes, the Slow ‘N Sear rarely leaves my kettle! One of my favorite accessories! Good tip on cleaning the grate, I usually let the fire do the job, but the heat gun can concentrate the exact areas! Thanks for watching! Cheers!

      Smokehouse BBQ I have one pack of burger left and a couple of steaks, saving for the summer. I don’t hunt anymore, but our daughters boyfriend loves to hunt and keeps me stocked up. I am pretty lucky for that. I have our local butcher convert some for sausage and sticks for him. I also keep them stocked up with homemade bacon and vacuum sealed meals.

      The Real Poody This grate is actually the Easy Spin Grate from SnS Grills. The grate will spin without getting caught. I used this for the cold grate technique. It is also nice if you are searing a few things at a time, you can turn the grate and get the meat out of the fire quickly. This does have the opening of the grate over the Slow N Sear to add charcoal. I do have the Weber grate that opens in the center, usually only use that if I have the Vortex in. Thanks for watching!

    I never need to probe my burgers. You are just bleeding out the juices by doing that. Just feel the firmness and you will have a juicer burger.

      @@beers-jackofbbq Frying the onions is pretty popular in British territories.
      We do NOT like our onions raw on burger. The only thing raw is the tomatoes and lettuce. And "good on you" for toasting your buns! Small improvement that the mouth enjoys.
      And for venison, you shouldn't cook as long as the beef. There is LESS FAT in venison, so it will "dry out" faster. Beef has more fat, so it'll be "juicy" still, but because venison is so lean, you can end up with a very dry burger. Not good for such an expensive meet.
      … think of it as a dray aged steak. You don't cook that for as long as a normal steak because there is no "juice" in it. It'll dry out way too fast and you'll ruin an expensive meat.
      *MY RULE: its always better to undercook then overcook. I can always cook the undercooked for longer. But once I go PAST the point of it being overcooked, I CANNOT go backwards. So I have a rule of shooting for slightly less time and lower temperatures … and I do this for ALL BBQ and baked foods.*
      PS: *that killer hogs rub is good.* His sauce is got to be the best sauce available.
      You should try EVERGLADES all purpose seasoning.
      You can find it on "Deermeat For Dinner" channel here on RUclips. He talks about it from time to time. I saw them and some friends using it on a large brisket. So I went and ordered it. He was right! I ended up using it on just about everything, even a hard boiled egg! I actually threw out my Lawrys seasoning salt and I've never went back to it … and its been about 2 years. It's funny. We treat Everglades like GAS! When we get low, I reorder. lol This house is incomplete without Everglades All Purpose Seasoning!

      MessengerOfTruth Thanks for the tips! I usually keep everything I do at medium rare. For these they had a good amount of pork fat mixed in, so they still stayed pretty juicy. I will check out that seasoning, I actually was given some Everglades Heat, that I never used yet. I will use that on my next cook! I use multiple of Killer Hogs rubs, I also use Kosmo’s as well.

    Hello gentlemen, do you still use this one? There is another one with charcoal can and propane ignition device for charcoal, what do you think about it?

      seiya209 Yes, I still use this all of the time. I do have multiple grills and use all of them, but for my steaks, chicken and burgers, this is my go to. This one is the Weber performer with the small side table. The one you are talking about is the Weber Performer Deluxe. It is a great grill with a large table, charcoal bin and the ignition you mentioned. I was debating on which one to get, I got mine because I did not need the extras since I have multiple grills and a good amount of working space on my back porch.
