Moist PISTACHIO & COCONUT cake

1¼ cups granulated sugar, divided
3 large eggs, at room temperature
1¼ cups all-purpose flour, plus more for greasing the pan
½ teaspoon baking powder
½ teaspoon kosher salt
¼ teaspoon baking soda
¼ cup shredded unsweetened coconut
⅓ cup shelled unsalted pistachios
½ cup + 2 tablespoons full-fat coconut milk, divided
1 tsp lemon zest
2 tablespoons freshly squeezed lemon juice, divided
½ teaspoon vanilla extract
