This is excellent!! I’ve used your recipe for years but I haven’t tried the technique with scraping the bottom a bit. I will definitely try that going forward. Also, I’ve always added my color and flavor at the end but I’m going to try it like this going forward.

Hi Chef Ro! Beautiful apples as always! Question: What’s the difference when adding color at the end, as opposed to the beginning? And, are there colors where adding at the end is better than the beginning (ie., white)?
Great questions. So adding colors at the end, opposed to adding at the beginning, it has its advantages either way adding color at the end helps achieve the color better when it comes to those that are new to coloring candy apples, or trying to perfect their apples the disadvantage to adding your color at the end of your candy mixture is if you overcook your mixture and then you add your color to the mix you will not achieve the desired color that you’re hoping or looking for so that’s why it’s important to cook your mixture to 300 and remove it from the stove and just set it on the counter until you’re ready to color it which you should have your color already out adding color while cooking with some brands, and some colors can burn the gel to show a different hue or tone of color, but is all a skill and is how you learn to mastered the skill to know what color brands or what colors to use so it’s all about skill and technique and adding to your mix at that particular time as for me, I do both I can add in the beginning and I also add at the end I like to teach people how to add the color at the end to give them a better chance of achieving the color without adding too much color to the mixture.

I’m always use them medium size apples in my area we don’t have larger apples anymore but if I was dipping larger apples, I would definitely double the recipe but with medium size apples I’m using a full recipe plus the half recipe which is 6 cups of sugar, 1 1/2 cup of water 1 1/2 cup of light corn syrup. It depends on what Brand and Colors you are using to color your mixture. You don’t want to add too much food coloring to any recipe because it will cause your mixture to seize and thicken up.
Hi! I dip my apples FULLY, but a few minutes later, air bubbles come up near the stick. I've even tried adding my stick after cleaning then and let them sit 24 to 48 hours. Any tips on how to prevent this?
At times that would happen, if you don’t completely dry around those areas, so don’t feel bad because it happens. We try to catch them all but just make sure you dry around the area that you’re going to insert your stick and straw and try not to wiggle your stick or straw while it’s inserted because that can also create those bubbles around the stick as well.
My 1st customer told me she found a apple 4 weeks later in her fridge. Cut it and it was perfect!!! The key - full coverage

Thank you so much for your regular and half recipe. I was able to get 18 apples out of it (varies sizes). This cut down my dipping time tremendously.
